1 jar (4.5 oz) sliced mushrooms, drained
1/4 teaspoon salt
1 large zucchini, sliced
1 medium red or green bell pepper, cut into pieces
1 teaspoon Italian seasoning
1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained

Steps:

  • Soak chickpeas in enough water to cover for at least 8 hours. Drain, discarding water.
  • In 3 1/2- to 4-quart slow cooker, mix chickpeas, onion, garlic, broth, mushrooms and salt.

2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 yellow onion, diced
1 small eggplant, diced
1 small yellow squash, diced
1 small zucchini, diced
Kosher salt and cracked black pepper
1/2 cup fresh basil leaves, chopped, plus more for garnish
One 15-ounce can diced tomatoes
1 cup low-sodium chicken broth
Garlic Crostini, recipe follows
1/2 French baguette, sliced on an angle
Olive oil, for drizzling
Kosher salt and cracked black pepper
1 clove garlic

Steps:
