1 large carrot, eeled

1 large green pepper

1 (16 ounce) package lasagna noodles (16 noodles)
1 medium onion, chopped
1 (35 ounce) can Italian plum tomatoes

Steps:

  • Cut zucchini, eggplant, and green and red peppers into 3/4 inch pieces.

1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh basil
salt
fresh ground black pepper
1 (15 ounce) container ricotta cheese
1 cup freshly grated parmesan cheese
2 large eggs, beaten
1/4 teaspoon freshly grated nutmeg
