GRILLED CHICKEN BREASTS IN RASPBERRY VINEGAR MARINADE

Grilled Chicken Breasts in Raspberry Vinegar Marinade image

This recipe was adopted from the RecipeZaar account. After making this myself, I found that the addition of a couple of tablespoons of seedless raspberry jam to the basting liquid really added a nice flavor. Use in the last few minutes of broiling or grilling as the jam will burn.

2 skinless, boneless chicken breasts
2 tablespoons butter
1 tablespoon vegetable oil
3 tablespoons shallots, minced
⅓ cup chicken stock
¼ cup raspberry vinegar
⅓ cup heavy whipping cream
salt and pepper to taste

Stir in the cream and return the chicken to the pan. Heat for 1 minute to warm the chicken, turning the chicken pieces to coat with the sauce. Season with salt and pepper to taste.

Tips:

  • Choose Fresh Ingredients: Fresh raspberries and chicken breasts will give the dish the best flavor. Look for plump, brightly colored raspberries and chicken breasts that are firm to the touch.
  • Marinate the Chicken: Marinating the chicken in the raspberry vinegar mixture will help to tenderize and flavor it. You can marinate the chicken for as little as 30 minutes or up to overnight.
  • Use a Cast Iron Skillet: A cast iron skillet will help to sear the chicken and give it a nice crust. If you don't have a cast iron skillet, you can use a regular skillet over medium-high heat.
  • Don't Overcook the Chicken: Chicken breasts can easily become dry if they are overcooked. Cook the chicken until it is cooked through but still juicy. The internal temperature should be 165 degrees Fahrenheit.
  • Make the Raspberry Vinegar Sauce: The raspberry vinegar sauce is a delicious and easy way to add flavor to the chicken. Simply simmer the raspberries, vinegar, sugar, and cornstarch until the sauce has thickened.

Conclusion:

Raspberry vinegar chicken breasts are a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet and tangy flavors from the raspberries and vinegar, along with the tender and juicy chicken, makes this dish a winner. Serve the chicken breasts with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
