  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.

4 medium-sized Beets (Fresh beets are a must. Canned beets are flavorless and disgusting.)
1 Orange
Mixed greens or endive (to cover the bottom of the dish)
Crumbled Gorgonzola cheese or Blue cheese
Candied Pecans
¼ cup Raspberry-Balsamic vinegar
¼ cup Blood Orange-infused olive oil (preferred, but regular olive oil works too)
1 Tbs. Champagne mustard (or honey mustard)
1 Tbs. Fresh Orange Juice

  • How to roast beets: Pre-heat oven to 375 degrees F. Rinse beets to remove any dirt or debris. Wrap each beet securely in tin foil and place on a cookie sheet. Put the cookie sheet in the oven and roast the beets for 45 minutes (1 hour if the beets are large). Remove the beets from the oven and let them cool for at least 1 hour. Unwrap the beets and peel off the skins. I would suggest wearing rubber gloves to do this so that your hands don't get stained. If you don't have rubber gloves, you may want to peel each beet under running water. Beet skins should come off easily. Slice each beet into eighths. Peel skin off the orange. Slice the orange into 4 quarters. Put one orange slice aside for the dressing. Take each orange wedge and slice into ½ inch thick pieces. Rinse and dry the mixed greens or endive. Line each salad dish with greens and place beets and oranges atop. Add the candied pecans and sprinkle the gorgonzola/blue cheese crumbles evenly over each plate. In a small Tupperware dish, combine Raspberry-Balsamic vinegar, olive oil, Champagne mustard and Fresh Orange Juice. Seal the dish with a lid (air-tight) and shake vigorously.

2 teaspoons poppy seeds

Steps:

  • To make the vinegarette drssing: Put raspberry preserves in a small bowl and cook in microwave at 50% power for 45 seconds or until preserves has liquified. Thoroughly mix all dressing ingredients in bowl with wire whisk. Set aside.
  • Put the spinach, salad greens, strawberries, blood oranges and cranberries in a large bowl and toss until ingredients are well blended. Mix the chopped pecans with the brown sugar. Sprinkle over the salad.
  • Whisk vinegarette again until well mixed. Drizzle the vinegarette over the salad. Use the quantity of vinegarette to your liking. Toss everything together until salad is evenly coated with the vinegarette dressing.

I have been trying to eat more fruits and vegetables, so salads have been on the menu almost every day. I've gotten tired of the same old.. same old.. I don't think I can look another piece of lettuce in the eye for quite some time, so this is what I came up with. Feel free to add or delete fruits and veggies as you see fit. This adjusts easily to make more than one serving. I find this to be 1 main dish serving, or two servings if being served along with something else. Easily adapted to Vegan.. just leave out the chicken, or replace with seasoned tofu.

1 grilled chicken breast, diced
1 ounce old cheddar cheese, diced small

4 ounces blue cheese
2 granny smith apples, thinly sliced

assorted baby greens
1/4 cup melted butter
1/4 cup olive oil
1/3 cup honey

Steps:

I came up with this salad one day and loved it! Now I bring this salad to dinner parties and it's always a huge hit. The two different vinaigrettes mixed together are a perfect combination of sweet, tart and tangy. For dinner parties with people I don't know well I usually leave the almonds and dressing on the side in case anyone has food allergies; only once has anyone passed on the almonds and dressing. This salad is also great topped with grilled chicken to make the salad a complete dinner.

2 1/2 cups lettuce (preferably a spring mix)
1/3 cup cucumber, sliced
1/2 cup cherry tomatoes, halved (or grape tomatoes)
1/4 cup red onion, sliced very thin
1/4 cup grapes, halved (or berries will work too)
3 tablespoons almonds, slivered
1/3 cup balsamic vinaigrette (or Red Wine Vinaigrette)
