1 ¾ cups chocolate

Steps:

  • Using a food processor or rolling pin, blitz the chocolate biscuits into fine crumbs.
  • Mix in the melted butter.
  • Divide the biscuit crumbs in 12 cases of a muffin tin.
  • Freeze for 10 minutes, or until solid.
  • Prepare the filling by gently heating the double cream over a low-medium heat.
  • Once hot, throw in the chocolate and allow the heat of the cream to melt it. Whisk together until completely smooth.
  • Pour the filling into the biscuit bases and garnish with the raspberries.

  • Preheat oven to 425°F.
  • Combine flour, sugar, and salt in a large mixing bowl. Cut butter into flour mixture until it resembles tiny peas.
  • Combine egg yolk, water, and lemon juice with a fork.

8 ounces cold butter, diced into cubes
1/4 cup cold water
1 cup fresh raspberries
1 cup fresh blueberries
1/2 cup sugar
1 lemon, zested
1/4 cup all-purpose flour
1/4 cup sugar
Pinch salt
1/4 teaspoon ground cinnamon
4 tablespoons cold butter, diced
1/2 cup creme fraiche
2 tablespoons lavender honey

Steps:

  • To make Tart Dough: In a food processor bowl, add all ingredients. Continue to pulse in processor. Remove dough and knead with a little bit of flour until a smooth ball forms. Wrap in plastic and cool for 1 hour.
  • To make Filling: Combine all ingredients gently.
  • To make Crumb Topping: Combine all ingredients in a food processor, until crumbly.
  • To make Lavender Creme Fraiche: Mix all ingredients well.

3 tablespoons granulated sugar
1/2 teaspoon salt
1/4 cup milk
For filling
1 stick (1/2 cup) unsalted butter
1 1/2 cups granulated sugar
1/3 cup fresh lemon juice
3 whole large eggs
3 large egg yolks
2 tablespoons freshly grated lemon zest (from about 1 1/2 lemons)
3/4 cup mascarpone cheese (about 6 ounces)
6 tablespoons heavy cream
For sauce
1 1/2 cups fresh or thawed frozen raspberries (not in syrup)
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1/2 cup superfine granulated sugar

Steps:

  • Make shells:
  • Cut butter into 1/2-inch pieces. In a food processor combine flour, pecans, sugar, and salt and pulse until finely ground. Add butter and pulse until mixture resembles coarse meal. Add milk and pulse until a dough just forms. Form dough into a flattened disk and chill, wrapped in plastic wrap, at least 1 hour and up to 1 day.
  • Press dough (about 1/3 cup for each shell) onto bottoms and up sides of eight 4 1/2-inch fluted tart pans with removable rims. Prick bottoms of shells all over with a fork. Freeze shells 1 hour.
  • Preheat oven to 350°F.
  • Arrange shells in a shallow baking pan and bake in middle of oven 18 minutes, or until golden. Cool shells in pans on a rack. Shells may be made 1 day ahead and kept, covered, at room temperature.
  • Make filling:
  • In a heavy saucepan combine butter, 3/4 cup sugar, and lemon juice over moderately high heat, stirring occasionally until butter is melted. Bring mixture to a boil, stirring, and remove pan from heat. In a bowl whisk together whole eggs, yolks, and remaining 3/4 cup sugar until thick and pale. Add hot butter mixture in a stream, whisking constantly, and transfer to pan. Cook mixture over moderate heat, stirring constantly, until thick and just beginning to boil. Pour mixture through a fine sieve into a heatproof bowl and stir in zest. Cool lemon mixture completely, its surface covered with buttered wax paper, and chill at least 8 hours and up to 1 day.
  • In another bowl with an electric mixer beat together mascarpone and cream until thick and smooth. Fold in 1 1/2 cups lemon mixture, reserving remainder for another use, until combined well.
  • Divide filling among shells, smoothing tops. Chill tarts, loosely covered, at least 1 hour and up to 1 day.
  • Make sauce:
  • In a blender puree sauce ingredients and pour through a fine sieve into a bowl, pressing on solids.
  • Sprinkle about 1 tablespoon superfine sugar evenly over each tart and caramelize with a blowtorch, moving flame evenly back and forth over sugar (not crust) until melted and caramelized, about 30 seconds. (Alternatively, caramelize sugar under a preheated broiler. If using broiler, cover crusts with pieces of foil to prevent burning.)
  • Serve tarts with raspberry sauce.

Living a healthier lifestyle doesn't mean you have to give up decadence and these vegan chocolate tarts prove it. They're rich and so full of flavor they'll knock you off your chair.

1 cup firmly packed pitted dates
½ cup walnuts
1 ½ cups vegan chocolate chips
1 tablespoon coconut oil
½ cup coconut cream (mix solid and liquid creams together before measuring)
3 tablespoons unsweetened cocoa powder
6 ounces fresh raspberries

Steps:

  • Combine dates and walnuts in the bowl of a food processor and blend until well combined, about 2 minutes. Press about 2 tablespoons of mixture into the bottom of 12 mini tart pans. Place in the freezer while making ganache.
  • Place chocolate chips and coconut oil in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Add melted chocolate to the bowl of the food processor. Add coconut cream and cocoa powder and mix on high until smooth, about 1 minute.
  • Remove crusts from the freezer. Spoon about 1 1/2 teaspoons of ganache on top of each crust, spreading to the edges. Add enough to reach halfway up the side of the tart cup. Place tarts back in the freezer until firm, about 10 minutes.
  • Mash raspberries in a bowl with a fork until they have the consistency of sauce. Spread a layer of mashed raspberries onto the hardened ganache layer, but don't go all the way to the edges. Freeze until sauce is firm and won't collapse when topped with ganache, about 20 minutes.

Steps:

  • Crust:
  • Combine butter, sugar and salt in a bowl. Beat in egg, then flour, 1/4 cup at a time, until you get a shaggy dough (it holds together loosely, but it's not smooth or elastic). 3/4 cup halved thinly sliced peeled tart apple
1/4 cup sugar

1 sheet refrigerated pie pastry
2 teaspoons butter, melted
TOPPING:
1 tablespoon all-purpose flour

1 cup sugar
3 large eggs
3 medium lemons, zested and juiced
3 tablespoons butter
1 pint raspberries
2 tablespoons sugar
12 frozen phyllo tart shells
1/2 cup heavy cream
Splash vanilla extract
12 small fresh mint leaves

Steps:

  • For the curd: Whisk together the sugar and eggs in a heatproof bowl until the sugar is completely dissolved. Reserve 1 teaspoon of the lemon zest for garnish, then stir the lemon juice and remaining zest into the sugar-egg mixture. Put the bowl over a double boiler and cook, whisking, until the mixture thickens, 6 to 8 minutes. Remove from the heat and whisk in the butter. Scrape into a clean bowl and press plastic wrap directly onto the surface of the curd. Refrigerate for at least 2 hours.
  • For the raspberry sauce: Reserve 12 raspberries for garnish and put the rest into a small pan. Add the sugar and cook over medium-low heat, breaking up the raspberries to release their juices. Do not let boil. Strain the juice into a bowl and let cool; discard the solids.
  • For the tarts: Preheat the oven to 350 degrees F. Put the phyllo shells on a baking sheet and bake until lightly browned, 3 to 5 minutes. Remove the shells to a rack to cool.
  • To assemble the tarts: Spoon a small amount of the raspberry sauce into each tart shell. Whisk the cream with a spoonful or 2 of the raspberry sauce and a splash of vanilla. Fill each shell with the lemon curd and then top with a dollop of whipped cream and a whole raspberry. Sprinkle with some of the reserved lemon zest and add a mint leaf.

1/2 teaspoon shortening
1 (2 ounce) package miniature phyllo cups (15 shells)
1 (3 ounce) package cream cheese, softened
2 tablespoons sour cream
2 tablespoons powdered sugar
2 teaspoons raspberry liqueur
15 fresh raspberries

Steps:

  • In a small saucepan, stir the cut up chocolate and shortening over low heat until melted.
  • Remove from heat.
  • Using a clean small paintbrush, brush the insides (bottom and sides) of each phyllo shell evenly with the melted chocolate.
  • Return each shell to the plastic tray included in the package.
  • Chill the phyllo shells in the refrigerator for about 20 min or until the chocolate is set.
  • Meanwhile, in another bowl, stir together the cream cheese, sour cream, and powdered sugar until smooth.
  • Stir in the raspberry liqueur.
  • Transfer the mixture to a small resealable plastic bag; seal bag.
  • Snip off a corner of the bag and pipe about 1-2 tsp of the cream cheese mixture into each shell.
  • Top each with a raspberry.
  • Cover tarts loosely and chill for 2-4 hours.

2 boxes pre-made pie crust (4 total)
4 cups rhubarb cut into 1/2" pieces
1 6 oz package of raspberries
1/3 cup sugar
1/4 cup agave syrup
1 tsp vanilla
Pinch of salt
1/4 cup cornstarch
1 egg beaten
Raw or large crystal sugar (optional)

Steps:

  • Disolve cornstarch in 3 Tbsp of water and set aside. Combine rhubarb, raspberries, sugar, agave, vanilla, and salt in a large saucepan and cook until sugar is dissolved (about 4 minutes). Add cornstarch mixture and bring to a boil, stirring frequently. Rhubarb will not be tender and cut pieces will be intact. Transfer contents to a bowl and put in refrigerator to cool for 30 minutes. Preheat oven to 400 degrees. Open 1 box of crusts and unroll onto a flat, floured surface. Place one rolled out crust on top if the other and press firmly to seal together. You can use a homemade crust, but the end result should be about 3/16" thick. Cut crust and press dough into 2-2 1/2" diameter mini tart pan(s). Save excess dough. The pan I use has places for 12 mini tarts. Use the beaten egg to apply an egg wash to the crusts in the pan. If desired, you can sprinkle raw or large crystal sugar on the edges of the tarts. Put filling in each of the tarts (3-4 pieces of rhubarb per tart). Bake until crust is golden brown and filling is bubbling 20-30 minutes. Cool in tart pan on wire rack. Repeat process with second box of crusts, and then combine the scraps of the two boxes and roll onto a flat, floured surface until dough is about 3/16". Serve on their own or with your favorite vanilla custard sauce.

Tips:

  • For the best flavor, use fresh raspberries when they are in season. If you are using frozen raspberries, thaw them completely before using.
  • If you don't have a pastry bag, you can use a spoon to dollop the filling into the tart shells.
