3 1/2 cups boiling water
2 - 12 oz packages frozen raspberries
1 - 20 oz. crushed pineapple, undrained
4 mashed bananas
1 pint sour cream
Fresh Raspberries and mint for garnish

Steps:

  • In a large bowl add packages of raspberry jello and boiling water. Mix with a wire whisk, until jello has completely dissolved.
  • Add frozen raspberries and crushed pineapple, undrained, to jello. Mix until well combined.
  • Remove 2 cups of jello mixture and set aside until later.
  • Stir in mashed bananas to the large bowl of jello.
  • Pour into a 9 x 13 baking dish and allow to chill on an even surface in the refrigerator until fairly well set.
  • Remove jello from refrigerator and top with sour cream. Spread sour cream evenly to cover base of salad.
  • Spoon reserved 2 cups of raspberry pineapple jello over the top of the sour cream.

1 teaspoon lemon juice
16 ounces cool whip (1 container, (lite or fat-free is fine))
3 cups raspberries ((sometimes I add blackberries and blueberries too! Any fresh/frozen berries will do))

  • Mix together pudding, Jell-o, water, and lemon juice in saucepan over medium heat until it boils.

1 cup boiling water
1 package (8 ounces) cream cheese, softened

1/3 cup chopped pecans
1/2 teaspoon vanilla extract
1 carton (8 ounces) frozen whipped topping, thawed

1 cup cold water
1 (21 ounce) can raspberry pie filling

2 packages (3 oz) or 1 package (6 ounce) raspberry flavored gelatin
1 can (14 oz) whole berry cranberry sauce
1 medium apple chopped (Any will do. We like honey crisp.)
2/3 cup chopped walnuts (optional - tastes great if you choose to use them)

Steps:

  • Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
  • Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
  • Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
  • Bring juice to a boil then remove from heat immediately.
  • Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
  • Add cranberry sauce and stir. {Gelatin mixture should be thick}.
  • Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
