1 tablespoon sugar
1/2 teaspoon salt
3/4 cup shortening, cold
1 egg, lightly beaten
3 tablespoons cold water
1 tablespoon white vinegar
FILLING:
1-1/3 cups sugar
2 tablespoons quick-cooking tapioca
2 tablespoons cornstarch
5 cups fresh or frozen unsweetened raspberries, thawed
1 tablespoon butter
TOPPING:
1 tablespoon 2% milk
1 tablespoon sugar
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. Combine the egg, water and vinegar; stir into flour mixture just until moistened. Divide dough in half so that one ball is slightly larger than the other; wrap each in plastic wrap. 1/2 recipe Perfect Pastry (or enough pastry for one double crust)
5 cups raspberries (fresh or frozen)
3/4 cup granulated sugar
1/3 cup all-purpose flour
1 tablespoon lemon juice
pinch nutmeg
1 large egg
1 tablespoon water

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, gently toss together the raspberries, sugar, flour, lemon juice and nutmeg. Set aside.
  • Roll out half of the pastry and fit it inside a 9 inch pie plate, trimming off the excess pastry.
  • Place the raspberry mixture inside the pie crust.

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening, plus
1 tablespoon shortening
2 -3 tablespoons cold water
4 cups raspberries, buy them when they're in season and freeze them in two-cup portions
1/2 cup flour
1 cup sugar, if you're using a sweeter berry like strawberries you can cut the sugar

Steps:

  • Preheat oven to 425 degrees.
  • Crust:.
