We make these all year long and when we want to go "over the top" we dip half of each square in warm chocolate.

1 1/4 pounds unsalted butter, room temperature
3/4 cup granulated sugar
3 extra-large eggs
3/4 teaspoon pure vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 pound unsalted butter
1 cup good honey
3 cups light brown sugar, packed
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 cup heavy cream
2 pounds pecans, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
  • For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

1 cup unsalted butter (2 sticks, softened)
3/4 cup honey
1/2 cup brown sugar
1 teaspoon salt
1 teaspoon baking powder
2 3/4 cups all-purpose flour
1 1/4 cups pecans, roasted and finely chopped
1 egg, lightly beaten
1 cup seedless raspberry preserves

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 9 by 13 baking pan with cooking spray.
  • Roast the pecans by spreading on a jelly roll pan and roasting in the oven for 10 - 15 minutes. Stir every 5 minutes (after 10 minutes check every 2 minutes so they don't burn!).
  • Cream together the butter, honey and sugar in a medium mixing bowl.
  • Add the salt, baking powder, flour and pecans and mix well.
  • Reserve one cup of dough for topping.
  • Add lightly beaten egg to remaining dough and mix well.
  • Spread this dough along bottom of prepared pan.
  • In microwave, warm the preserves to make them easier to spread.
  • Spread preserves over the dough in the pan.
  • Crumble the reserved dough over the jam (the dough will be soft).
  • Cook for 30 - 35 minutes until golden brown around edges.
  • Let cool before cutting.

  • Heat oven to 350°F. Line 8- or 9-inch square baking pan with aluminum foil, extending foil over edges. Grease foil; set aside.

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
2 eggs

Steps:

  • Preheat oven to 350°F. Mix graham crumbs, pecans, 1/4 cup of the sugar and the butter. Reserve 1/2 cup of the crumb mixture; press remaining mixture onto bottom of 13x9-inch baking pan. Bake 10 min. Spread with jam; set aside.
