SPRING DELIGHT OATMEAL (RASPBERRY PEAR)

Spring Delight Oatmeal (Raspberry Pear) image

My mom and I came up with the idea for this yummy spring time oatmeal one day while we strolling through the grocery store and spotted cartons of fresh raspberries just in for spring. You are more than welcome to try adjusting any ingredients to your preferences- this is just how I think it tastes best! Quick tip: Make sure to soak any materials that come in contact with cooked oats. Otherwise, they dry to to the surface and are nearly impossible to clean off! For the pears, one of the Dole, or Del Monte fruit cups works great!

RASPBERRY DELIGHT

Raspberry Delight image

Refreshing dessert, fit for company but easy enough to make for a family dinner. Prep time includes refrigeration for the jello to start to set, I'm guessing it takes around 20 minutes or so. I prefer this recipe with fresh raspberries, but frozen works just as well. The serving size is also an estimate, I used a lasagna pan to make it in and it served 13 last Thanksgiving - it really depends how big you cut the squares.

Provided by Minxkat1

Categories     Dessert

Time 1h

Yield 12 serving(s)

Number Of Ingredients 8

1 box graham cracker crumbs
1/4 cup butter
1 (2 large) box raspberry Jell-O gelatin
2 1/4 cups hot water
1 box frozen raspberries or 2 cups fresh raspberries
1/2 cup milk
36 large marshmallows
1 cup whipping cream

Steps:

  • Melt 1/4 cup butter in saucepan, add graham cracker crumbs, reserving 3/4 cup of crumbs for garnish.
  • Press mixture into rectangular pan.
  • Bake for 10 minutes at 350 F.
  • Cool.
  • Place contents of two jello boxes in bowl, add 2 1/2 cup hot water.
  • Dissolve and add one box of frozen raspberries, or 2 cups of fresh.
  • Let set until spreading consistancy (soft gel) then pour over graham crust.
  • Dissolve marshmallows in milk over low heat, remove and cool.
  • Whip 1 cup whipping cream and fold into cooled marshmallow mixture.
  • Blend well.
  • Pour over jello section and cover with remaining graham cracker crumbs.
  • Chill until ready to serve.

Tips:

  • For the best results, use ripe and juicy raspberries and pears. This will ensure that the dessert is flavorful and has a good texture.
  • If you don't have cornstarch, you can use all-purpose flour instead. However, keep in mind that the cornstarch will give the filling a slightly thicker consistency.
  • Be careful not to overcook the filling. It should be thick and bubbly, but it shouldn't be too thick or it will become gummy.
  • If you don't have a pastry brush, you can use a spoon to spread the egg wash on the pastry.
  • Serve the raspberry pear delight warm or at room temperature. It can be topped with whipped cream, ice cream, or fresh berries.

Conclusion:

The raspberry pear delight is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up fresh raspberries and pears, and it is sure to be a hit with family and friends. So next time you are looking for a special dessert, give the raspberry pear delight a try.
