3/4 cup butter, softened
1 cup packed brown sugar
1 1/2 cups quick-cooking oats
1 cup raspberry jam

Steps:

  • Preheat oven to 400°; grease a 13x9-inch pan.
  • Combine flour and baking soda; set aside.
  • In medium bowl using mixer, cream butter and sugar until light and fluffy.
  • Stir in the flour mixture until well-blended.
  • Beat in the oats with a wooden spoon (dough should be crumbly).

Tips:

  • Use fresh raspberries: Fresh raspberries will give your bars the best flavor. If you can't find fresh raspberries, you can use frozen raspberries that have been thawed and drained.

  • Chill the dough before baking: Chilling the dough will help the bars hold their shape while baking.
  • Bake the bars until they are golden brown: The bars are done baking when they are golden brown on top and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely before cutting them: Letting the bars cool completely will help them set and make them easier to cut.
