1 cup butter
1 cup white sugar
2 cups all-purpose flour
1 egg
⅔ cup raspberry preserves
¼ cup melted butter
2 eggs
1 ½ cups flaked coconut
1 teaspoon white sugar

Steps:

  • Cream butter and sugar. Add egg and mix. Add flour and blend well. Pat into a 13 x 9 inch pan.

1 cube butter, softened
2 c flour
1/2 cup packed brown sugar
1/4 t salt
1 1/2 cups chocolate chips (divided)
1 14 oz. can sweetened condensed milk
1/3 cup seedless raspberry jam
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees. For the crust: In a large bowl, beat butter until creamy. Add flour, brown sugar and salt and beat well. Press 2 cups of the crumb mixture into a 9 x 13 inch baking dish that has been lightly greased. Bake for 10-12 minutes or until edges are lightly golden. Meanwhile, combine 1 cup of chocolate chips and sweetened condensed milk in a saucepan. Cook over low heat until melted,stirring constantly. Carefully spread the chocolate mixture over the hot crust. Sprinkle the remaining crumb mixture evenly over the chocolate. Next, drop the jam by teaspoonfuls over the crumb mixture leaving spaces in-between and swirl with a knife. Sprinkle the remaining chocolate chips and white chocolate chips over the top. Place on the lowest rack in the oven (to prevent browning) and bake for 25-30 minutes or until the center is set. Cool completely and cut into bars.
