This is a absolutely wonderful, yet easy-to-make dessert which can be simple or elegant. It consists of a 'no fail' baked custard filling with fresh raspberries. The custard is mildly sweet and the fresh raspberries add a fresh tartness to the flavor. This dessert will impress anyone and trust me, everyone will ask for the recipe. Serve plain as a 'simple' dessert or add to the elegance by adding a dollop of creme fresh with a fresh raspberry to really give a nice presentation. - Preheat oven to 375 degrees. Roll pate brisee to 1/8-inch thickness on a lightly floured surface. Fit into a 9-inch pie dish, and trim edges, leaving a 1-inch overhang. Tuck overhang under so edges are flush with rim, and crimp edges. Prick bottom of dough with a fork. Freeze for 15 minutes. Line dough with parchment, and fill with pie weights or dried beans. Bake until edges begin to turn gold, 25 to 30 minutes. Remove weights and parchment. Bake until crust is light gold and cooked through, 10 to 15 minutes. Let cool on a wire rack.
- Reduce oven temperature to 350 degrees. Whisk flour and 1/2 cup sugar in a medium bowl. Add egg and cream, and whisk to combine. Toss raspberries, remaining 1/4 cup sugar, and the salt in a medium bowl. Spoon berries into crust, then pour in cream mixture, filling to just below the rim.
- Bake until custard is set but still a bit wobbly in the center, about 45 minutes. Let cool in dish on a wire rack. Cover, and refrigerate for at least 2 hours (or up to 1 day). Garnish with fresh raspberries, and serve cold.

- Combine rhubarb, sugar, and 1 tablespoon water in medium saucepan. Stir over medium heat until sugar dissolves. Cover; cook until rhubarb softens to thick pulp, stirring often, about 8 minutes. Mix in jam; cool. do ahead Can be made 1 week ahead. Cover; chill.
- For dough:
- Sift flour, sugar, baking powder, and salt into large bowl. Using large holes on box grater, grate frozen butter into bowl; stir to blend. Cover and freeze at least 15 minutes. DO AHEAD: Can be made 1 day ahead. Keep frozen.
- Preheat oven to 400°F. Line large rimmed baking sheet with parchment paper. Add 2/3 cup ice water to flour mixture, tossing until soft dough forms, adding more ice water by tablespoonfuls if dough is stiff. Transfer to lightly floured surface; knead gently 5 or 6 turns (butter should remain in firm pieces). Roll out dough to 12x9-inch rectangle. Spread 6 tablespoons filling over dough, leaving 1-inch plain border on all sides. Starting at 1 long side, roll up jelly-roll style; seal seam. Place seam side down on prepared sheet. Seal ends. Brush glaze over pastry.
- Bake pastry until golden (jam may leak out), about 30 minutes. Cool pastry briefly.
- Cut roly-poly crosswise into 6 to 8 rounds. Serve warm with Vanilla Custard Sauce and remaining filling.

- Preheat oven to 350°F. Place 1 tablespoon preserves, then 6 berries in each of six 3/4 cup custard cups or ramekins. Whisk sugar, eggs, yolks, vanilla and salt to blend in medium bowl. Heat half and half over medium heat until tiny bubbles form around edge of pan. Gradually whisk half and half into egg mixture. Evenly divide custard mixture among cups with berries. Set cups into 13x9x2-inch baking pan. Pour enough hot water into baking pan to reach halfway up sides of cups.
- Place pan with custards in oven; bake until custards are just set in center, about 35 minutes. Remove custards from water and cool 10 minutes. Refrigerate at least 2 hours. (Can be made 1 day ahead. Cover and keep refrigerated.)

- 1. Place the ready made pie crust into pie place, flute the edges and polk with a fork on bottom and sides before berries go in. Slice straberries, put blueberries and raspberries in the bowl with 1/4 cup of sugar set aside. Beat the eggs and mix the sugar through. Add flour, melted butter and heavy cream, beat thoroughly. Place all berries in the pie crust and add the egg mixture of top. Preheat the oven to 325, bake 1 hour and turn up heat to 350 for an additional 20 minutes. Check for doneness after 10 minutes, oven may vary. Mine usually goes for 20. Enjoy.
- 2. Chill to serve. I usually put fresh whipped cream on top.

- Fill roasting pan with 1/2 inch of hot tap water; place in center of oven.
- Heat oven to 350°F.
- You'll need eight 6 ounce custard cups; place 4or 5 raspberries on the bottom of each.
- Beat egg whites in a medium bowl with mixer on medium speed until foamy.
- Beat in 2 tablespoons of the sugar until stiff, shiny peaks form when beaters are lifted.
- With same beaters (no need to wash), beat yolks and remaining sugar in a large bowl until mixture is light.
- Beat in flour, extract, lemon zest and juice.
- Gradually beat in milk.
- Using a wire whisk, gently fold egg whites into yolk mixture just until combined.
- Divide batter among prepared cups (cups should be filled to the top).
- Place cups in hot water in roasting pan.
- Bake until puddings are puffed and golden brown on top -- about 24 minutes.
- Serve puddings warm or at room temperature, with confectioners' sugar and remaining raspberries.

- Roll out pastry sheet to a 12-by-14-inch rectangle. Line a 10-inch ceramic tart dish with pastry, pressing it into bottom and up side of dish. Trim edge, leaving 1/2 inch to hang over rim of dish. Refrigerate dough 20 minutes.
- Preheat oven to 400 degrees. Prick dough all over with a fork. Generously line shell with parchment, and fill with pie weights or dried beans. (Parchment should drape over rim of dish to prevent shell from overbrowning.) Bake shell 35 minutes. Remove parchment and weights, and bake shell until pale golden brown, about 2 minutes more. Let shell cool 5 minutes. Reduce heat to 350 degrees.
- Meanwhile, make the filling: Whisk together creme fraiche, sugar, vanilla, salt, eggs, and flour in a medium bowl until smooth.
- Pour filling into tart shell, and bake until custard is set, about 20 minutes. Let cool on a wire rack 30 minutes. To serve, top tart with raspberries.

- 1. In a bowl, beat 3/4 cup sugar with butter until light and fluffy. Beat in egg yolks until incorporated. Stir in lemon zest and juice. Add salt, then flour and mix until blended. Gradually add milk, beating to make a smooth batter.
- 2. In a separate bowl, with clean beaters, beat egg whites until soft peaks form. Add remaining 1/4 cup sugar and beat until stiff peaks form. Fold into lemon mixture, then fold in raspberries.
- 3. Pour mixture into a 6-cup lightly greased baking or souffle dish. Cover with foil and tie tightly with a string. Place dish in a large oval slow cooker and add boiling water to come 1 inch up the sides. Cover and cook on HIGH for 3 hours, until the cake springs back when touched lightly in the center. Dust lightly with confectioner's sugar and serve.

LEMON CUSTARD WITH RASPBERRY SAUCE

- 1 Set a rack in the middle level of the oven and preheat to 300 degrees.
- 2 Combine the milk and sugar in a medium saucepan and whisk several times to mix. Bring the mixture to a boil over low to medium heat.
- 3 Use a vegetable peeler to remove just the yellow zest from the lemons in large strips. Do not include any of the white pith beneath the zest, which would impart a bitter flavor.
- 4 When the milk boils, remove it from the heat, add the lemon zest and cinnamon stick, and allow to steep for 5 minutes.
- 5 Combine the eggs and vanilla in a mixing bowl and whisk well, but not so quickly that the eggs become foamy. Strain the milk mixture into a lipped container, such as a 4-cup measure, to remove the strips of zest and the cinnamon stick.
- 6 Pour the milk into the egg mixture in a thin stream, whisking constantly but not quickly to avoid creating too much foam.
- 7 After the milk has been added, let the mixture rest for 5 minutes, then use a ladle or large kitchen spoon to remove any foam from the surface. Pour the mixture into the lipped container and fill the molds almost to the top.
- 8 Place the pan of molds on the oven rack and immediately pour 3 to 4 cups of warm water into the pan around the molds so that the water comes about halfway up the side of each mold. If the molds fit tightly in the pan, it may be necessary to remove one temporarily to have room to pour in the water.
- 9 Bake the custards for about an hour, or until they are completely set and no longer wobbly in the center.
- 10 Remove the pan from the oven and place it on a rack for 10 minutes to cool. Then remove the molds from the pan and cool them completely to room temperature. Individually wrap each mold in plastic and chill until you intend to serve them.
- Serving
- Serve the custards in the molds or unmold them to dessert plates. To unmold, insert the point of a paring knife about 1/4 inch deep between the mold and the custard. Run the knife all around the inside of the mold to loosen the top. Using your fingertips, ease the top of the custard to one side, letting some air into the space you create between the custard and the mold. Invert a dessert plate on the mold, then invert it again. Holding both the mold and plate firmly with both hands, quickly raise and lower the stack to unmold the custard. If it does not emerge easily from the mold, repeat the motion several times. Top each custard with a couple of spoonfuls of the raspberry sauce.
- Storage
- Keep refrigerated at all times. You may prepare these custards a day or two in advance, but don't keep them more than 3 days total.

- If you don't have a ramekin, you can use a small ovenproof bowl or a custard cup.
