Number Of Ingredients 12

2 tablespoons olive oil
1 large sweet onion (diced)
2 cloves garlic (crushed)
2 cups raspberries
1/2 cup fresh basil leaves (loosely packed)
3 chipotle chiles in adobo sauce
1 cup ketchup
2/3 cup brown sugar (tightly packed)
2 tablespoons Worcestershire sauce
2 teaspoons ground mustard
1/2 teaspoon black pepper
2 racks pork loin baby back ribs

Steps:

  • In a large saucepan over medium-high heat, heat olive oil. Add in sweet onion and saute for about 5 minutes. Add in garlic and saute for another 60 seconds. Stir in raspberries, basil, chipotle chiles, ketchup, brown sugar, Worcestershire sauce, ground mustard, and pepper. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes.

RASPBERRY CHIPOTLE RIBS

These will be devoured quickly!

Categories     Appetizers     Main     Main Course

Number Of Ingredients 5

8 lbs pork baby back ribs (about 2 racks)
1 cup thick BBQ sauce (like Sweet Baby Ray's)
1 cup raspberry preserves
1 small onion (chopped)
2 chipotle peppers packed in adobo

Steps:

  • Place sauce ingredients in a blender or food processor and process until smooth; set aside.
  • Cook ribs your favorite way--leaving rack(s) whole. I used my Instant Pot and cooked at high pressure for 15 minutes, releasing the pressure immediately.
  • Heat your outside grill to high heat for direct cooking. When grill is heated, slather the ribs in the prepared sauce and grill each side until the sauce is bubbling and beginning to get brown. You can baste with the sauce several times while finishing them off for more flavor.
  • If a grill isn't an option, pop them under a broiler, basting frequently, until they are bubbly.

Tips:

  • For the best flavor, use fresh raspberries. Frozen raspberries can also be used, but they may not be as sweet or flavorful.
  • Chipotle peppers can be spicy, so use them to taste. If you don't like spicy food, you can use less chipotle pepper or omit it altogether.
  • The ribs can be cooked in the oven or on the grill. If you are cooking them in the oven, be sure to cover them with foil so that they don't dry out.
  • The cooking time will vary depending on the thickness of the ribs. Ribs are done when they are tender and the meat pulls away from the bone easily.
  • Serve the ribs with your favorite sides, such as coleslaw, potato salad, or roasted vegetables.

Conclusion:

These raspberry chipotle back ribs are a delicious and easy-to-make dish that is perfect for any occasion. The ribs are tender and flavorful, and the raspberry chipotle sauce is the perfect finishing touch. Whether you are cooking them in the oven or on the grill, these ribs are sure to be a hit. So next time you are looking for a new and exciting way to cook ribs, give this recipe a try.
