REAL WELSH RAREBIT
A classic version of this dish was shared with me years ago. This is is my adaptation to more local ingredients. If you don't like beer, you can replace it with milk and it will still taste great. Serve over toasted bread or English muffins.

Tips:
- Use a variety of cheeses: Different cheeses will give your rarebit a different flavor and texture. Try using a combination of cheddar, Parmesan, and Gruyère for a classic rarebit, or experiment with other cheeses like brie, Gouda, or goat cheese.
- Add-ins: Feel free to add other ingredients to your rarebit to give it a unique flavor. Some popular add-ins include bacon, ham, mushrooms, onions, and peppers. You can also add herbs, spices, or a splash of Worcestershire sauce.
- Don't overcook the rarebit: Rarebit is best when it is cooked until it is just melted and bubbly. If you overcook it, it will become tough and rubbery.
- Serve rarebit immediately: Rarebit is best served hot and fresh. If you let it sit for too long, it will start to thicken and become less creamy.
Conclusion:
Rarebit is a delicious and versatile dish that can be easily customized to your liking. With its creamy, cheesy texture and endless variations, it's no wonder that rarebit has been a popular dish for centuries. So next time you're looking for a quick and easy meal, give rarebit a try. You won't be disappointed!
