MRS. PH'S HEFTY RAPID RISE WHOLE WHEAT BREAD (BREAD MACHINE)

Mrs. Ph's Hefty Rapid Rise Whole Wheat Bread (Bread Machine) image

From http://recipes.sparkpeople.com/recipe-detail.asp?recipe=449535. Original cook's comments: This is a dense whole wheat bread. Using applesauce instead of butter and honey in place of sugar make this bread very dense but delicious. I make in the bread machine. My comments: This worked first time for me using the rapid bake cycle on my Black & Decker bread machine. It is a dense tasty loaf. The only change I made was the order I put the ingredients in the loaf pan. Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. I doubt this recipe would work on a super rapid cycle.

Time 2h15m

Yield 1 1/2 lb. loaf, 12 serving(s)

Number Of Ingredients 7

1 cup water, luke warm
2 tablespoons non-fat powdered milk, stirred into water
1 tablespoon honey
1 1/2 teaspoons salt
2 tablespoons applesauce
3 cups whole wheat flour
1 1/2 tablespoons bread machine yeast (equals 4 1/2 tsp. or 2 packages)

Steps:

  • Simply add ingredients in order shown and start on the rapid setting. (My note: this is order for my B&D bread machine. I used the light crust setting.).
  • Note from the original cook: I've had much better luck with the rapid setting than the whole wheat setting.
  • Note from the original cook: Because whole wheat flour is heavy I use 2 pkg of yeast. If you only have one pkg, make this with the whole wheat setting or the setting that allows the most rise time.

I doubt this recipe would work on a super rapid cycle.

RICH WHITE BREAD FOR THE FOOD PROCESSOR - W/ RAPID RISE YEAST

Rich White Bread for the Food Processor - W/ Rapid Rise Yeast image

This recipe comes from the Fleishman's Yeast site-it uses Rapid Rise ( also know as bread machine) Yeast. Rapid Yeast only needs 1 rise instead of two. I have changed the recipe only a bit ( and I added some additional directions) to make the recipe easier to follow.

Time 1h30m

Yield 1 loaf, 6 serving(s)

Number Of Ingredients 7

3 cups bread flour
2 tablespoons sugar
2 1/4 teaspoons fast rising yeast
1 teaspoon salt
3 tablespoons unsalted butter, cut up into little pieces
1 egg
3/4 cup warm water (120F-130F)

Steps:

  • 1. With dough blade inserted, place flour, sugar, yeast and salt -- then process fro 5-10 seconds to combine.
  • 2. Add butter and egg to mix and pulse.
  • 3. Start the processor and slowly pour the warm water through the chute intil the dough forms a ball. All the water may not be needed. If the mix looks crumbly, then add bits of water. If the mix looks watery, then add some flour.
  • 4. Once the ball is formed, process for another 1-2 minutes. The dough should be smooth and elastic.
  • 5. Remove the dough from the processor bowl and form the dough into a ball. Let the dough ball sit for 10 minutes to rest.
  • 5. Shape the dough as desired ( it can be shaped anyway but it must fit into a loaf pan).
  • 6. Place into loaf pan ( spray with Baker's Joy first). Cover dough with a moist, warm, wrung out, cloth. Let dough rise, in pan,.
  • until doubled . This will take anywhere from 30 - 60 minutes. Dough should be "proofed" before placing into preheated oven. The dough should , when pressed lightly, bounce back slowly ( a small indent may be left.).
  • 7. Bake for 25-30 minutes , at 350 F or until a thermometer reads, when inserted deep into the dough, 195°F.
  • 8. Let loaf cool in pan fro the first 10 minutes, then cool loaf on rack.

Tips:

  • Use fresh, high-quality ingredients for the best results.
  • Make sure your bread machine is clean and dry before using it.
  • Follow the manufacturer's instructions for your specific bread machine.
  • Measure ingredients accurately. Too much or too little of an ingredient can affect the final product.
  • If you are using a new brand or type of flour, be sure to adjust the amount of liquid you add to the recipe. Different flours absorb liquid differently.
  • If the dough is too dry, add a little bit more liquid. If the dough is too wet, add a little bit more flour.
  • The ideal dough temperature is between 75 and 85 degrees Fahrenheit. If the dough is too cold, it will not rise properly. If the dough is too warm, it will rise too quickly and the bread will be dense.
  • Be patient! Bread making takes time. Allow the dough to rise fully before baking.

Conclusion:

With a little practice, you'll be able to make delicious, whole wheat bread in your bread machine. This versatile bread can be used for sandwiches, toast, or croutons. It's also a great way to get your daily dose of whole grains. So next time you're looking for a quick and easy way to make fresh bread, give this recipe a try.
