1 small onion
1 - 2 cups diced ham
salt and pepper, to taste
48 ounces Randall Beans (Great Northern, Pintos or Mixed), do not drain

Steps:

  • In a saucepan or skillet, melt butter.
  • Add onions and sauté until softened. Add diced ham and cook until warmed.

1 thick slice fully cooked ham with bone
2 tablespoons butter, divided
1 onion, diced
2 carrots, diced
1 clove garlic, minced
1 (16 ounce) can great northern beans, undrained
2 cups water, or as needed
2 bay leaves
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Cut ham off bone in bite-size pieces, reserving bone. Melt 1 tablespoon butter in a skillet over medium heat and fry ham pieces in hot butter until lightly browned, about 4 minutes.
  • Melt 1 tablespoon butter in a large saucepan; cook and stir onion, carrots, and garlic in the hot butter until softened and onion is translucent, about 5 minutes. Pour undrained beans into vegetables, add ham and reserved ham bone, and pour in water to make soup your desired thickness. Stir bay leaves into soup and season with salt and black pepper.
  • Bring soup to a boil, reduce heat to medium-low, and simmer for 25 minutes. Remove ham bone and bay leaves before serving.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

1 24oz jar randalls great northern beans
1 24oz jar randallpinto beans
1 46oz (6 cups) chicken stock
2 lb (3 cups) uncooked chicken thighs****
1 c chopped onion
1 c chopped celery
2 clove garlic-minced
2 Tbsp parsley
1 tsp rosemary
1 tsp basil
1/2 tsp thyme
1/2 tsp oregano
1 tsp salt
1/4 tsp pepper
28oz can(s) whole peeled tomatoes..chopped or diced tomatoes
2 c ham-cubed
1/2 lb polish sausage
***YOU MAY SUBSTITUTE COOKED CHICKEN FOR UNCOOKED CHICKEN THIGHS. REDUCE 1ST COOKING TIME BY 15 MINUTES

Steps:

  • 1. In a large soup pot or skillet,pour in chicken stock. Add next 11 ingredients. Bring to a boil & simmer 45 minutes or until chicken is done.
  • 2. Meanwhile,place sausage in a skillet,cover with water7 simmer 15 minutes. Drain sausage,remove from skillet & cut into 1/4" slices. Add to soup. De-bone chicken & cut into pieces. Return chicken to soup.
  • 3. Add ham & simmer for10 minutes. Add beans and simmer 10 minutes.
