- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly browned, about 5 minutes. Cook and stir onion in the bacon grease until onion is transparent, 5 to 10 minutes. Remove bacon from skillet and drain on a paper towel-lined plate; crumble.
- Stir chopped tomatoes, tomato sauce, cilantro, jalapeno pepper, salt, pepper, and crumbled bacon into onion; bring to a simmer and cook until flavors blend, about 15 minutes.

RANCHERO SAUCE
Steps:
- On a gas range or under a broiler, roast the green, red and poblano peppers until well charred. Let cool. Stem and seed the charred peppers. Coarsely chop and set aside.
- In a spice grinder or with a mortar and pestle, finely grind the whole guajillo and pasilla chiles and set aside.
- In a large saucepan, warm the oil over medium heat. Add the onions and cook, covered, 3 to 5 minutes. Add the guajillo and pasilla chiles, cumin, chili powder, oregano, thyme, black pepper, salt and garlic. Stir and cook until the spices become fragrant and are fully coated in oil, 3 to 5 minutes.
- Add the tomatoes, green chiles and sugar. Stir and continue to cook until the sauce starts to simmer. Reduce the heat to medium-low and continue to cook until the vegetables soften and the flavors come together, 30 to 40 minutes. Taste and add additional salt and pepper as needed.

- Melt butter in heavy large skillet over medium heat. Add next 6 ingredients and sauté until vegetables are soft, about 5 minutes. Add broth and tomato sauce and cook until sauce thickens and reduces to 1 1/2 cups, stirring frequently, about 20 minutes. Mix in cilantro.
GRILLED RED TROUT WITH RANCHERO SAUCE

- Salt and pepper the meat side of the fish, spray with nonstick cooking spray if desired. Place skin side down on a hot grill. Cook about 30 seconds and flip over. The skin should separate from the meat. Cook 1 to 2 minutes, and turn over, to finish cooking the other side of the fillet. When cooked through, around 1 minute more, depending on the temperature of your grill, remove from heat. Serve hot with ranchero sauce.

- Combine everything in a large pot or rondeau, and simmer over gentle heat for 1 hour, stirring occasionally to prevent any scorching on the bottom. Add a little water if it becomes any thicker than ketchup. Allow to cool before puréeing.

- 1. In a medium sauce pan over medium heat, add oil and smoke.
- 2. Sweat garlic and onion in oil until tender.
- 3. Add jalapeno and cook for 10 minutes covered.
- 4. Add tomatoes with salt. (salt will draw the liquid from tomatoes.) Cook covered for 30 minutes on medium low heat.
- 5. Drain excess tomato liquid from pan.
- 6. Add cilantro and broth to pan. Simmer for 5 minutes covered. (Adjust the thickness of the sauce with broth. Be sure to drain all the excess liquid you can, the tomato liquid is super watery, but the 1/2 cup of broth will add the extra flavor you are looking for. You might need more than 1/2 cup or a little less depending on how much liquid your tomatoes give up while cooking.)
- 7. Add paprika, salt, pepper, cayenne, chilli, lime juice and cumin.
- 8. Blend mixture with immersion blender, or transfer to a standard blender until smooth. (If you like chunky sauce don't blend it, tastes the same whether smooth or not.)
- 9. Simmer the sauce for about 15 minutes before serving. A little tip: if you find the sauce too watery after you add your stock, no big deal, simmer it uncovered, it'll thicken itself up in no time.

I made this sauce one day by fooling around with a recipe in "Border Cooking." I had on hand some great homemade chicken broth and a fresh batch of my Diablo Dust (chile powder made with guajillos and anchos). A good quality chile powder like Gephardt's works nicely, and canned broth should be fine, although, I think homemade is superior. Use this sauce for huevos rancheros, egg dishes, burritos, chimichangas, enchiladas, etc. It is not a table sauce, but is best for topping hot foods.

- Saute onions and jalapenos over a medium heat for 1-2 minutes. Add garlic. Saute another 30 seconds. VEGGIE ENCHILADAS WITH RANCHERO SAUCE

- First make your sauce. Saute onions, jalapenos, and fresh tomatos in oil. Salt generously to release the water in the tomatos, it makes a better sauce. If you are using canned tomatos, add them after onions are cooked soft. Then add poblano, tomato sauce and oregano, cover and let simmer. If you use cilantro, don't add it until you are ready to put the sauce on the enchiladas, or it can turn bitter To make enchilada filling: Grate squash and then carrots in food processor, set aside. In a heavy skillet with a lid, saute onion, celery, carrot, garlic, spices and jalapeno in oil until onions soften, 5-7 minutes. Add grated squash on top of sauted mixture, cover and let simmer until squash is steamed, about 10 minutes. In a large bowl, mix cooked veggies with grated cheese. This is the filling for your enchiladas. To assemble enchiladas, first ladle 1/2 cup sauce into a cassarole dish. Heat about 2 T. oil in a small skillet, and sprinkle in a little chili powder. Using tongs, fry tortillas two at a time quickly in hot oil, just long enough to soften. Fresh tortillas will bubble up a little, so watch out for the steam. Set them on a plate and cover while you fry the rest, adding more oil and chili powder to the pan as needed. Put a softened tortilla in the cassarole dish, fill with about 2 T veggies and roll up tightly. Keep going until your dish is full. Pack them in fairly tight, so they will not unroll. Top with just enough sauce to cover all, then with cheese down the center of the pan so it looks nice. Bake at 350 until bubbly, about 20 minutes. Garnish with chopped cilantro and serve hot.
BREAKFAST WRAP WITH RANCHERO SAUCE

- In corn tortilla layer iceberg lettuce, Jack cheese, sunny-side up eggs. Top with Ranchero sauce.
- In a skillet over medium heat, combine tomatoes, jalapeno, onion and garlic. Add the oregano, chili powder, and salt and allow to cook about 10 to 12 minutes, or until onions are translucent. If sauce appears too thick, dilute with up to 1/2 cup water.
- Ladle half of sauce into a food processor or blender and puree. Combine with remaining half of sauce and serve warm.
