Time 25m

Yield 4 burgers

Number Of Ingredients 9

5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

NIMAN RANCH BURGERS

Provided by Ina Garten

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 15

2 pounds ground Niman Ranch beef or other grass-fed premium beef (80 percent lean and 20 percent fat)
1 tablespoon good Dijon mustard
3 tablespoons good olive oil, plus extra for brushing the grill
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 sandwich-size English muffins, halved
Good mayonnaise
Caramelized Onions, recipe follows
2 tablespoons good olive oil
2 tablespoons unsalted butter
2 pounds yellow onions, peeled and sliced in half-rounds
1/2 teaspoon fresh thyme leaves
2 tablespoons sherry wine vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Build a charcoal fire or heat a gas grill.
  • Place the ground beef in a large bowl and add the mustard, olive oil, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 6 (3 1/2-inch) patties of equal size and thickness.
  • When the grill is medium-hot, brush the grill grate with oil to keep the burgers from sticking. Place the burgers on the grill and cook for 4 minutes. Using a big spatula, turn the burgers and cook for another 3 to 4 minutes, until medium-rare or more, or cook longer if you prefer hamburgers more well done.
  • Meanwhile, break apart the English muffins and toast the 6 halves cut side down on the grill. Spread each half with mayonnaise and top with a burger and then with a heaping tablespoon of caramelized onions. Serve hot.
  • Heat the olive oil and butter in a large shallow pot, add the onions and thyme, and toss with the oil. Place the lid on top and cook over medium-low heat for about 10 minutes to sweat the onions. Remove the lid and continue to cook over medium-low heat, stirring occasionally, for 25 to 30 minutes, until the onions are caramelized and golden brown. If the onions are cooking too fast, lower the heat. Add the vinegar, salt, and pepper and cook for 2 more minutes, scraping the brown bits from the pan. Season to taste (they should be very highly seasoned).

Tips:

  • Choose High-Quality Ground Pork: Opt for fresh, ground pork with a good fat content (around 20%) for juicy and flavorful burgers.
  • Use Fresh Herbs and Spices: Fresh herbs like parsley, cilantro, or chives add a burst of flavor to the burgers. Ground cumin, paprika, and chili powder are classic seasonings that complement pork well.
  • Don't Overwork the Meat: Mixing the ingredients should be done gently to avoid tough burgers. Overworking the meat can result in dense and dry patties.
  • Shape and Chill the Patties: Form the patties gently, handling them as little as possible. Make sure they are of uniform thickness for even cooking. Chilling the patties for at least 30 minutes before cooking helps them hold their shape.
  • Cook Over Medium Heat: Use medium heat to cook the burgers, allowing them to cook thoroughly without burning the outside.
  • Don't Flip the Burgers Too Often: Flipping the burgers too frequently can disrupt the cooking process and cause them to dry out. Flip them only once, when they have developed a good crust on the bottom.
  • Use a Meat Thermometer: To ensure the burgers are cooked to your desired doneness, use a meat thermometer. For medium-rare burgers, cook to an internal temperature of 145°F (63°C), and for medium-well burgers, cook to an internal temperature of 160°F (71°C).
  • Let the Burgers Rest: After cooking, let the burgers rest for a few minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful burgers.

Conclusion:

The recipes in this article offer a versatile and delicious take on the classic burger, using ground pork as the base. By following the tips provided, you can create flavorful and juicy ranch-style pork burgers that are sure to be a hit at your next gathering. Experiment with different toppings and sides to find your perfect combination, and enjoy these delicious burgers as a satisfying meal anytime.
