1 pound sausage (I used pork)
1 small onion (diced)
3 stalks celery (diced)
2 garlic cloves (minced)
1 can chicken broth (14.5 ounce)
1 can cream of celery soup*
1 cup uncooked rice
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
  • Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

1 lb bulk hot sausage
1 c chopped celery
1 c chopped onion
1 c green pepper
2 can(s) (10 3/4 oz.) chicken broth
1 c uncooked regular rice
1 1/2 tsp salt
1/4 tsp black pepper

Steps:

  • 1. Brown sausage in a heavy skillet.
  • 2. Drain 1/2 of the grease off.
  • 3. Add celery, onion, and green pepper.
  • 4. Simmer until tender.
  • 5. Add broth, rice and seasonings.
  • 6. Stir to mix.
  • 7. Pour into a 2 quart casserole dish.
  • 8. Cover and bake at 325 degrees for 1 hour.

28 ounces fresh, ground spicy pork sausage
1 cup uncooked long-grain rice
1 slice onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can whole peeled tomatoes, crushed
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet, brown sausage and drain grease. Stir in rice, onion, garlic and peppers. Cook 5 minutes. Stir in tomatoes, chicken broth, salt, pepper and cayenne pepper. Pour into 9x13 inch pan.

1 lb bulk sausage
1 cup onion, chopped
1 garlic clove, minced
1 cup celery, chopped
1 green pepper, chopped
1 cup rice, uncooked and washed
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Preheat oven at 350°.
  • Brown sausage in frying pan and pour off grease.
  • Add chopped onion, garlic, celery, and green pepper to sausage and simmer until tender.
  • In bowl combine rice and soups and then add cooked ingredients.
  • Pour into greased Pyrex pan.
  • Bake 1 1/2 hours at 350°, stirring occasionally.
