This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

4 pounds russet potatoes, cut into 1/4 inch cubes
2 teaspoons chili powder
1 teaspoon salt
½ teaspoon ground black pepper
6 tablespoons butter, cubed
1 (8 ounce) package shredded colby-Monterey Jack cheese blend
1 (8 ounce) bottle Ranch dressing

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
  • Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.

8 to 10 medium potatoes, peeled and cut into 1/2-inch cubes
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/4 cups milk
1 envelope ranch salad dressing mix
1-1/4 cups shredded sharp cheddar cheese, divided
Salt and pepper to taste
6 bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil; cook for until almost tender, 10-12 minutes. Drain; place in a greased 13-in. x 9-in. baking dish. , Meanwhile, preheat oven to 350°. In a large bowl, combine the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper; pour over potatoes. Top with bacon and remaining cheese. , Bake, uncovered, until bubbling and potatoes are tender, 25-30 minutes.

2 1/2 lbs southern style hash browns
2 (10 3/4 ounce) cans cream of chicken soup
3/4 cup sour cream
3/4 cup shredded mozzarella cheese
1 (1 1/8 ounce) envelope ranch dressing mix
2 tablespoons dried onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded colby-monterey jack cheese, divided
1/2 cup melted butter, divided
1 cup crushed cracker

Steps:

  • Set aside 1/2 cup of the shredded Colby-jack cheese; stir togther 1/4 cup of the melted butter and the crushed crackers in a small bowl; set this aside also.
  • Combine all remaining ingredients in a large bowl.
  • Turn potatoes into a lightly greased 9x13" baking pan; top with reserved cheese, and buttered crushed crackers.
  • Bake, uncovered, at 375° degrees for 30-35 minutes or until golden brown.
