CREAMY RANCH PASTA SALAD

Creamy Ranch Pasta Salad image

My husband's favorite - he'll put away the whole batch in two days. Not the lightest pasta salad, but very tasty and refreshing on a hot day. This is a great side with sandwiches, chicken, burgers, etc., or it makes a good lunch by itself. This is very flexible, so feel free to add/omit veggies, adjust seasonings or increase/decrease dressing as you see fit.

6 hard-cooked eggs, coarsely chopped

Nutrition Facts : Calories 230, Carbohydrate 19 g, Cholesterol 90 mg, Fat 2 1/2, Fiber 0 g, Protein 7 g, SaturatedFat 2 1/2 g, ServingSize 1 Serving, Sodium 370 mg, Sugar 3 g, TransFat 0 g

Tips:

  • Choose the right pasta. Short pastas like penne, rotini, or macaroni are ideal for pasta salad because they hold the dressing well.
  • Cook the pasta al dente. This means cooking it until it is tender but still has a slight bite to it. Overcooked pasta will be mushy and not hold its shape.
  • Rinse the pasta with cold water after cooking. This will stop the cooking process and help to prevent the pasta from sticking together.
  • Use a variety of vegetables. This will add color, texture, and flavor to your pasta salad. Some good choices include cherry tomatoes, cucumbers, bell peppers, and broccoli.
  • Don't be afraid to add protein. Grilled chicken, shrimp, or tofu are all great additions to pasta salad.
  • Make a flavorful dressing. The dressing is what will really make your pasta salad shine. Use a combination of olive oil, vinegar, herbs, and spices to create a dressing that is both flavorful and tangy.
  • Let the pasta salad chill before serving. This will allow the flavors to meld and the pasta to absorb the dressing.

Conclusion:

Pasta salad is a delicious and versatile dish that is perfect for potlucks, picnics, and summer gatherings. With so many different variations to choose from, there is sure to be a pasta salad recipe that everyone will enjoy. So next time you're looking for a quick and easy meal, give pasta salad a try.
