RAISIN PUDDING
This old-fashioned dessert tastes like the comforting long-cooked pudding Grandma used to make, but it really is quick and easy to prepare. The flavor is wonderful. We have it often because my whole family enjoys it. You can make it sugar-free, if you'd like, by using sugar-free pudding mix. -Margaret Vieth, Norwalk, Wisconsin

Tips:
- Use fresh, plump raisins for the best flavor and texture.
- Soak the raisins in hot water for 15 minutes before adding them to the batter. This will help them plump up and become juicy.
- Cream the butter and sugar together until light and fluffy. This will help incorporate air into the batter, resulting in a tender and moist cake.
- Add the eggs one at a time, beating well after each addition. This will help prevent the batter from curdling.
- Stir in the dry ingredients gradually, until just combined. Overmixing can result in a tough cake.
- Pour the batter into a greased and floured 9x13 inch baking pan. Bake at 350 degrees Fahrenheit for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting. This will help prevent the frosting from melting.
Conclusion:
Raisin pudding cake is a classic dessert that is easy to make and always a crowd-pleaser. With its moist and tender crumb, plump raisins, and creamy frosting, it's the perfect cake for any occasion. So next time you're looking for a delicious and satisfying dessert, give this raisin pudding cake a try. You won't be disappointed!
