2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup shortening
2 eggs
1 ½ cups white sugar
¼ cup lemon juice
2 teaspoons lemon extract
1 cup rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 cookie sheets.
  • In large bowl, cream shortening, sugar, eggs, lemon juice and lemon extract. Mix until well blended. Blend in the flour, baking soda and salt. Stir in the oats and raisins. Drop dough by spoonfuls 2 inches apart on to cookie sheets.
  • Bake for 12 to 15 minutes and transfer to racks to cool.

3/4 c sugar
1 egg
1/2 tsp lemon extract
1-3/4 c flour
3/4 tsp cream of tartar
3/4 tsp baking soda
1/4 tsp salt
1 c raisins

Steps:

  • 1. Cream butter with sugar. Blend in egg and lemon extract. Sift together dry ingredients and add to butter-sugar mixture and mix until a compact dough is formed. Stir in raisins. Roll into 1 inch balls.
  • 2. Place on lightly greased cookie sheet. Flatten with fork dipped in flour, making a crisscross pattern. Bake at 400 degrees for 8 to 10 minutes.

1 cup shortening
2 cups packed brown sugar
3 large eggs
4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
FILLING:
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup raisins
1 large egg, beaten
1 tablespoon butter
3 tablespoons lemon juice
1 to 2 teaspoons finely grated lemon zest

Steps:

  • In a bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture and mix well. Cover and chill overnight. , For filling, combine sugar and cornstarch in a saucepan. Add water; stir to dissolve. Add raisins; cook and stir 2 minutes more. Remove from the heat. Stir a little of the hot mixture into beaten egg; return all to saucepan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter, lemon juice and zest.
