RAISIN PEAR CHUTNEY image

Categories     Fruit

Yield 2 pints

Number Of Ingredients 9

2 cups cider vinegar
1-1/4 cups packed brown sugar
3 pounds unpeeled ripe pears, diced
1 medium onion, copped
1 cup raisins
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 garlic clove, minced
1/2-1 teaspoon cayenne pepper (your taste)

Steps:

  • In a large saucepan, bring vinegar and brown sugar to a boil. Stir in the remaining ingredients. Return to a boil. Reduce heat; simmer, uncovered, for 2 to 2-1/2 hours or until chutney reaches desired consistency. Ladle into hot jars, leaving 1/4-in. headspace. Adjust caps. Process for 15 minutes in a boiling water bath. Remove jars to a wire rack to cool completely. Yield: 2 pints. Check out the recipes at: www.havefunbaking.com And also at: www.lovetobakeandcook.blogspot.com

Tips:

  • Use plump, fresh raisins. Avoid using dried-out or wrinkled raisins, as they will not add as much flavor to the chutney.
  • Soak the raisins in hot water for 15 minutes before using. This will help to plump them up and make them more tender.
  • Use a variety of spices in your chutney. This will give it a more complex flavor. Some good spices to use include cinnamon, cloves, cardamom, and ginger.
  • Cook the chutney over medium heat. This will help to prevent it from burning.
  • Stir the chutney frequently while it is cooking. This will help to prevent it from sticking to the pot.
  • Let the chutney cool completely before serving. This will allow the flavors to develop and mellow.

Conclusion:

Raisin chutney is a delicious and versatile condiment that can be enjoyed with a variety of dishes. It is easy to make and can be stored in the refrigerator for up to 2 weeks. So next time you are looking for a new and exciting way to add flavor to your meals, give raisin chutney a try!
