4 cups water
1 cup uncooked wild rice
salt to taste
1 medium head radicchio, cut into wedges
2 large plums, pitted and cut into wedges
2 tablespoons olive oil, divided, or as needed
salt to taste
1 ounce crumbled goat cheese, or more to taste
1 tablespoon chopped fresh basil, or to taste
1 teaspoon chopped fresh thyme, or to taste
1 teaspoon aged balsamic vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Bring water, wild rice, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, 30 to 45 minutes. Drain any excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more. Set aside.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place radicchio and plum wedges on skewers. Coat in 1 tablespoon olive oil and season with salt.
  • Grill skewers on the preheated grill just until slightly charred, 1 to 3 minutes per side.

Yield 4 servings

Number Of Ingredients 8

4 slices bacon
1 small shallot, finely chopped
3 tablespoons sherry vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
1 head of radicchio, leaves separated, larger leaves torn
4 plums, cut into wedges
1/4 cup Gaeta olives

Steps:

  • Cook bacon in dry medium skillet over medium-low heat, turning occasionally, until crisp, 8-12 minutes. Transfer to paper towels to drain.
  • Reduce heat to low and cook shallot in same skillet, stirring often, until translucent, about 2 minutes. Add vinegar, oil, mustard, and 1 Tbsp. water and whisk until smooth.
  • Toss radicchio, plums, and olives in a large bowl. Drizzle dressing over; season with salt and pepper. Toss to coat.
  • Transfer salad to a platter, then crumble bacon over.

Tips:

  • Choose ripe and firm radicchio and plums for the best flavor and texture.
  • Use a sharp knife to thinly slice the radicchio and plums. This will help the salad to be more delicate and easier to eat.
  • Toast the walnuts in a pan over medium heat until they are fragrant and slightly browned. This will enhance their flavor and add a nice crunchy texture to the salad.
  • Use a light and flavorful dressing to complement the radicchio and plums. A simple vinaigrette made with olive oil, balsamic vinegar, honey, and Dijon mustard is a good option.
  • Serve the salad immediately after it is made. This will help to prevent the radicchio and plums from wilting.

Conclusion:

This radicchio and plum salad is a delicious and refreshing side dish that is perfect for summer gatherings. The radicchio adds a slightly bitter flavor to the salad, while the plums add a touch of sweetness. The walnuts add a nice crunchy texture, and the dressing brings all of the flavors together. This salad is sure to be a hit with your family and friends.
