Time 30m

Yield 4 servings

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil, plus more for garnish
1/2 pound bulk Italian hot sausage
2 large cloves garlic
1 medium onion
1 1/2 pounds baby red or Yukon gold potatoes, thinly sliced
Salt and freshly ground black pepper
1/2 cup dry vermouth or dry white wine
1 pint cherry tomatoes, halved
4 haddock or cod fillets
A handful flat-leaf parsley, chopped
1/2 lemon
Crusty bread, to pass at table

Steps:

  • Heat 1 tablespoon of extra-virgin olive oil, a turn of the pan, over medium-high heat. Heads up: use a skillet with a tight fitting lid. Add the sausage and crumble while browning, about 3 to 4 minutes. While the sausage browns, crush the garlic. Peel the onion, trim off the root end and then thinly slice. Add the garlic, onions and potatoes to the pan with the sausage and season with salt and pepper, to taste. Douse the pan with half of the vermouth or wine, cover the pan with a lid and cook 10 to 12 minutes. Remove the lid, add the tomatoes and gently stir into the potatoes. Set fillets on top of the potatoes and douse with the remaining vermouth or wine. Season the fish with salt and pepper, to taste. Set lid in place and cook until the fish is opaque, about 6 to 8 minutes.
  • Top the fish with parsley, the juice of 1/2 a lemon and garnish with a liberal drizzle of extra-virgin olive oil. To serve, transfer the fish and sausage mixture from the pan into shallow bowls to hold the juice. Use the crusty bread to soak in the juices at the table.

SAUSAGE, PEPPER AND ONION ONE-POT

Sausage, Pepper and Onion One-Pot image

Provided by Rachael Ray : Food Network

Time 2h

Yield 4 servings

Number Of Ingredients 14

2 pounds Italian hot and/or sweet sausages
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons fennel seed
1 red chile pepper, thinly sliced
2 cubanelle peppers, thinly sliced
1 red bell pepper, cored and thinly sliced
2 large red or yellow onions, thinly sliced
4 cloves garlic, thinly sliced
2 tablespoons tomato paste
1/2 cup dry white wine
1 cup chicken stock
1 (15-ounce) can tomato sauce or stewed tomatoes
A generous handful flat-leaf parsley, finely chopped
A loaf ciabatta bread*

Steps:

  • Place the sausages in a high-sided skillet or Dutch oven and add 1-inch water and 1 tablespoon extra-virgin olive oil to the pan. Bring the mixture to a boil, then reduce the heat a bit and allow the water to boil away. The sausages will gently cook through in the water, and then the oil will crisp the casings up to a deep brown. Remove the sausages to a plate.
  • Heat extra-virgin olive oil, a couple of turn of the pan, in the same skillet over medium-high heat, stir in fennel seed and chile pepper, then add in the peppers, onions, and garlic as you slice them, season with salt and pepper and cook 15 minutes to soften. Stir in the tomato paste 1 minute, then wine for 1 minute more. Add the chicken stock and canned tomatoes. Finish with parsley.
  • Slice the sausages on an angle and add to the pot. Cover, cool completely, and store for a make-head meal. Reheat, covered, over moderate heat or in moderate oven.
  • Crisp up chunks of bread in a warm oven just before serving for mopping up your plate!

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 17

2 tablespoons extra-virgin olive oil, 2 turns of the pan
3/4 pound bulk Italian hot sausage
3/4 pound, 1 package, andouille sausage, cut into 1-inch lengths on an angle
1 1/2 pounds boneless, skinless chicken thighs, cut into large chunks
Salt and freshly ground black pepper
1 large onion, quartered and thinly sliced
2 carrots, shredded
3 to 4 ribs celery from the heart, thinly sliced
1 fresh bay leaf
2 (15-ounce) cans white cannellini beans
5 to 6 fresh sage leaves, thinly sliced
1 cup dry white wine
2 cups chicken stock
1/2 loaf baguette
3 tablespoons butter, melted
A handful fresh parsley sprigs, left whole
3 to 4 sprigs fresh thyme, left whole

Steps:

  • Heat a Dutch oven over medium-high heat with extra-virgin olive oil. Crumble the Italian sausage into large pieces, add to Dutch oven and begin to brown, about 2 to 3 minutes. Add the andouille and crisp at edges, 2 to 3 minutes. Remove browned sausages to a paper towel lined plate and add chicken, season with salt and pepper. Lightly brown chicken a couple of minutes on each side then add veggies and bay leaf, add more salt and pepper and cook 7 to 8 minutes more to soften veggies. Add sausages back to the pan along with the beans and sage. Deglaze with wine and stir in the stock.
  • Turn broiler on and set rack in the middle of the oven.
  • Coarsely chop the bread in food processor into large crumbs, remove blade and toss with melted butter (it melts in 15 seconds in microwave) and the parsley, thyme, salt and pepper. Cover the sausage and chicken with bread and set in oven to brown 2 to 3 minutes. Serve directly from the pot. Keep an eye out for that bay leaf and sprigs!

Yield serves 4

Number Of Ingredients 12

1 tablespoon EVOO (extra-virgin olive oil), plus some for liberal drizzling to garnish
1/2 pound bulk Italian hot sausage
2 large garlic cloves
1 medium onion
1 1/2 pounds baby red or Yukon Gold potatoes
Salt and pepper
1/2 cup dry vermouth or dry white wine
1 pint cherry tomatoes, halved
4 haddock or cod fillets
A handful of fresh flat-leaf parsley, chopped
1/2 lemon
Crusty bread, to pass at the table

Steps:

  • In a skillet with a tight-fitting lid, heat the tablespoon of EVOO over medium-high heat. Brown the sausage for 3 to 4 minutes, breaking it down into crumbles as it cooks. While the sausage browns, crush the garlic and trim off the root ends, then thinly slice the onion and potatoes.
  • Add the garlic, onions, and potatoes to the pan and toss to combine with the sausage. Season with salt and pepper.
  • Douse the pan with half the vermouth or wine, set the lid in place, and cook for 10 to 12 minutes.
  • Add the tomatoes to the pan and gently fold into the mixture. Set the fillets atop the mixture and douse with the remaining vermouth or wine.
  • Season the fish with salt and pepper. Set the lid in place and cook for 6 to 8 minutes, until the fish is opaque.
  • Top the cooked fish with the parsley, sprinkle with the juice of the lemon half, and drizzle liberally with EVOO.
  • Serve the mixture at the table from the pan into shallow bowls to hold the juice.
  • Soak crusty bread in the pan drippings and pass at the table.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid scrambling.
  • Use a large pot: You'll need a large pot to accommodate all of the ingredients in this recipe. A Dutch oven or stockpot works well.
  • Brown the sausage and fish: Before adding the other ingredients, brown the sausage and fish in a little bit of oil. This will help to develop their flavor and prevent them from becoming dry.
  • Add the vegetables: Once the sausage and fish are browned, add the vegetables to the pot. Cook them until they are softened, about 5-7 minutes.
  • Add the liquids: Next, add the chicken broth, tomato sauce, and white wine to the pot. Bring the mixture to a simmer and cook for 15-20 minutes, or until the fish is cooked through.
  • Season to taste: Finally, season the dish with salt, pepper, and Italian seasoning to taste.

Conclusion:

This sausage and fish one-pot dish is a delicious and easy meal that is perfect for a busy weeknight. It's packed with flavor and nutrients, and it can be on the table in under an hour. So next time you're looking for a quick and easy meal, give this recipe a try!
