1 tablespoon olive oil
2 large yellow onions
1 dash salt and pepper
2 dashes steak seasoning
2 teaspoons olive oil
1 1/4 lbs lean sirloin steaks, sliced very thin
1 teaspoon garlic salt
black pepper
8 slices provolone cheese
4 hoagie rolls

Steps:

  • In sauce pan over med-high heat, add olive oil, onions and seasonings.
  • Toss occasionally and cook until soft.
  • On griddle pan or large sauce pan, wipe with olive oil and paper towel and heat to med-high to high heat.
  • Sear and cook meat until brown- about 2 minutes each side--careful not to overcook.
  • Remove from heat and sprinkle with seasonings.
  • Toss meat and onions together.

1 bag frozen garlic and herb or steak fries, Ore-Ida Steak Fries preferred brand
OR 4 Italian rolls
8 portobello mushroom caps
5 tablespoons butter
2 large onions
6 large cloves garlic
Salt
Ground white pepper and black pepper
1 large bay leaf
2 tablespoons thyme
1/2 cup dry sherry, Marsala or white wine
2 tablespoons Worcestershire or vegetarian Worcestershire
1 tablespoon tamari, shoyu or soy sauce
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
4 to 5-ounce chunk provolone cheese
1 sack (2 cups) shredded yellow or white cheddar cheese
Giardiniera, drained and chopped and/or Italian hot cherry pepper rings, for serving

  • Preheat oven to 450 degrees F.
  • Gather your ingredients.
  • For the fries: Line a baking sheet with fries and bake 25 minutes to very crispy.
  • Stem and gill (scrape underside of caps with teaspoon) the mushrooms and wipe with damp towel to remove grit. Thinly slice the mushrooms. Melt 3 tablespoons of butter in large skillet over medium-high heat and when it foams add the mushrooms. Brown well until meaty in fragrance and well browned.
  • Halve, peel and thinly slice onions and peel garlic. In a second large skillet over medium heat, melt 2 tablespoons butter then add the onions and season with salt, white pepper and bay leaf. Cook until tender, 8 to 10 minutes, stirring occasionally. Turn the heat up to medium-high to high, add about 3/4 cup water and let it absorb completely. Then lower heat to low and remove bay leaf.
  • While onions cook, grate or chop the garlic. Add to mushrooms along with thyme, salt, black pepper, sherry, Marsala or wine, Worcestershire and soy sauce. Reduce heat to low.
  • For the cheese sauce: In a sauce pot, melt butter over medium-high heat. Whisk in flour, add milk and while it thickens grate provolone. Add it and the cheddar in small handfuls to sauce.
  • Top the fries with mushrooms, sweet, soft onions, cheese sauce, chopped giardiniera and/or cherry pepper rings and serve. OR layer slices of provolone on a roll with mushrooms, onions and chopped giardiniera.

1 tablespoon Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper

1 yellow onion, chopped
½ green bell pepper, chopped
24 egg roll wrappers
12 slices American cheese
¾ cup vegetable oil for frying

Steps:

  • Heat a skillet over medium heat. Cook beef, breaking apart as little as possible, until browned and still the size of peas, 5 to 7 minutes. Add Worcestershire sauce, salt, and pepper. Stir gently and remove mixture from pan.
  • Melt butter in the skillet. Add onion and bell pepper; cook and stir until browned, 5 to 7 minutes. Return beef mixture to the skillet and stir to combine. Let filling cool while preparing the wrappers.

2 large yellow onions, thinly sliced
coarse salt
pepper or steak seasoning
2 teaspoons extra virgin olive oil
1 1/2 lbs lean beef tenderloin or 1 1/2 lbs sirloin, thinly sliced
1 teaspoon garlic salt
fresh ground black pepper
8 slices provolone cheese
4 sandwich hoagie rolls, split lengthwise (I use Sara Lee)

Steps:

  • Heat a medium saucepan over medium high heat.
  • Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan.
  • Add onions and season with salt and pepper or steak seasoning blend.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.
