RöSTI (SWISS POTATO CAKE WITH ONION)

Rösti (Swiss Potato Cake With Onion) image

In Zurich, a German-speaking city, practically every bar and beer hall garnishes its big plates of meat with this kind of hash brown cake; it might be "cheese" or "onion" or "plain" Rösti, but you'll always be happy to see it. Refrigerating the whole baked potatoes overnight makes them much easier to grate. Special equipment: an adjustable blade slicer fitted with julienne blade, a food processor fitted with medium shredding disk, or a box grater. Chill time is included in total time. Tips:

  • Use the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet potatoes, when grated and fried.
  • Grate the potatoes finely: This will help them cook evenly and create a crispy crust.
  • Don't overcrowd the pan: Cook the potatoes in batches if necessary, so that they have enough room to brown.
  • Press the potatoes down firmly: This will help them stick together and create a crispy crust.
  • Be patient: Rösti potatoes take a little time to cook, so don't rush the process. Cook them over medium heat until they are golden brown and crispy.
  • Serve immediately: Rösti potatoes are best served hot out of the pan.

Conclusion:

Rösti potatoes are a delicious and versatile dish that can be served as a main course or a side dish. They are easy to make and can be customized with a variety of toppings and seasonings. Whether you like them plain or loaded with your favorite toppings, rösti potatoes are sure to please everyone at the table.
