Spinach and Quinoa Salad with Dried Apricots image

This salad is so, so, SO pretty, and a cool example of how quinoa can play a supporting role in a salad. The play of leafy greens against the quinoa, punctuated by the tart chewiness of the dried apricots, the bite of the onion and the tanginess of the dressing, makes for a very exciting salad.

1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Tips:

  • Use fresh, young spinach: Wilted spinach salad is best made with fresh, young spinach. Avoid using spinach that is wilted or has yellowed leaves.
  • Cook the quinoa properly: Quinoa should be cooked according to the package directions. If you are using a different type of grain, such as brown rice or barley, be sure to adjust the cooking time accordingly.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Overcooked spinach will become mushy and lose its flavor.
  • Use a flavorful dressing: The dressing is what will bring all the flavors of the salad together. Be sure to use a flavorful dressing that you enjoy.
  • Add other vegetables and protein: Feel free to add other vegetables and protein to your salad, such as chopped tomatoes, cucumbers, bell peppers, or grilled chicken.

Conclusion:

Quinoa wilted spinach salad is a healthy and delicious salad that is perfect for a quick and easy lunch or dinner. It is packed with nutrients and can be easily customized to your liking. So next time you are looking for a healthy and satisfying salad, give this quinoa wilted spinach salad a try. You won't be disappointed!
