QUINOA SALAD

Quinoa Salad image

Quinoa, a "new" ingredient that has been around for thousands of years, is a tiny, high-protein grain from South America. It's nicknamed the "wonder grain" because it cooks more quickly than rice, is virtually foolproof, and is lighter and more nutritious than other grains.

QUINOA WITH CORN AND ZUCCHINI

Quinoa With Corn and Zucchini image

Sweet corn and nutty-tasting quinoa make a nice combination that is also nutritionally rich. Quinoa has more iron than any other grain, and it's a good source of manganese, magnesium, phosphorus and copper. It's also a good source of protein.

Categories     side dish

Time 1h

Yield Serves six to eight

Number Of Ingredients 10

1 cup regular or red quinoa
3 cups water, chicken stock or vegetable stock
1/2 teaspoon salt, or to taste
1 tablespoon extra virgin olive oil
1/2 small onion, finely chopped
1 to 2 garlic cloves (to taste), minced
Kernels from 1 ear corn
1 medium zucchini, cut in small dice
2 to 4 tablespoon chopped fresh cilantro
1/4 to 1/2 cup crumbled queso fresco or feta (optional)

Steps:

  • Place the quinoa in a bowl, and cover with cold water. Let sit five minutes. Drain through a strainer, and rinse until the water runs clear.
  • Bring the water or stock to a simmer in a medium saucepan. Heat another medium saucepan or lidded skillet over medium-high heat, and add the quinoa. Toast, stirring, until the grains have separated and begin to smell fragrant. Add the water or stock and salt. It should come to a boil quickly. Reduce the heat to low, cover and simmer 15 to 20 minutes, until the quinoa is tender and translucent and each grain displays a little thread. Drain and return to the pan. Cover the pan with a clean dish towel, replace the lid and allow to sit undisturbed for 10 minutes.
  • Meanwhile, heat the olive oil in a large, heavy skillet over medium heat, and add the onion. Cook, stirring, until tender, about five minutes, and add the garlic, corn and zucchini. Season with salt and pepper, and cook, stirring, until the zucchini is tender and translucent and the corn tender, five to eight minutes. Stir in the quinoa and toss together. Heat through, add the herbs and serve with a little crumbled queso fresco or feta sprinkled on top if desired.

QUINOA WITH ROASTED CORN AND PEPPERS

Time 45m

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons extra virgin olive oil
1 1/2 cups corn kernels (fresh is best, but defrosted frozen works well, too)
1/2 yellow bell pepper, chopped
salt, to taste
fresh ground black pepper, to taste
3/4 cup quinoa, rinsed and well-drained
1 1/2 cups stock (water can be used instead)
chopped fresh herb (to garnish, I prefer either chives, parsley, or cilantro)

Steps:

  • Heat oil over medium-high heat in a skillet with a lid. Once oil is hot, add the corn and yellow pepper. Season with salt and fresh-ground pepper, then cook, stirring occasionally, until veggies soften and corn begins to brown (10 minutes or so).
  • Add the quinoa and stir. Continue cooking for a couple minutes. When quinoa starts popping and getting toasted, add the stock or water and bring to a boil. Stir one more time, then cover and reduce heat to low. Cook covered and undisturbed for 15 minutes.
  • Uncover and check quinoa for doneness. If the grains are still hard, make sure there's still enough liquid to keep the bottom of the pan moist, cover and cook for another 5 minutes.
  • When the quinoa is ready, remove from the heat and taste for seasonings. Add more salt and pepper if needed, then add the chopped herbs for garnish. This can be served warm, or it can be allowed to cool to room temperature before serving.

Tips:

  • Use a good quality quinoa for the best flavor and texture. Quinoa should be rinsed thoroughly before cooking to remove any bitter saponins.
  • Cook the quinoa according to the package instructions. Quinoa typically takes about 15-20 minutes to cook.
  • While the quinoa is cooking, prepare the other ingredients for the salad. Chop the vegetables and herbs, and cook the corn if using fresh corn.
  • Once the quinoa is cooked, let it cool slightly before adding it to the salad. This will help to prevent the salad from becoming too mushy.
  • Add the other ingredients to the quinoa and toss to combine. Season the salad with salt, pepper, and any other desired seasonings.
  • Serve the salad immediately or chill it for later. Quinoa salad can be stored in the refrigerator for up to 3 days.

Conclusion:

This quinoa salad with corn and red pepper is a delicious, healthy, and refreshing salad that is perfect for a summer meal. It's easy to make and can be customized to your liking. So next time you're looking for a healthy and satisfying salad, give this quinoa salad a try!
