- Preheat oven to and spray an 8-inch-square baking dish with non-stick cooking spray.
- Heat oil in a medium skillet over medium heat until hot. Add onion and garlic and sauté for 1 minute or until onion is tender. Add quinoa and cook, stirring, until golden brown and toasted, 2 to 3 minutes. Add 2 1/2 cups water, bring to a boil, reduce heat to medium-low and simmer, covered, until water has been absorbed, about 10 minutes. Remove from heat.
- Whisk eggs and milk together in a large bowl. Stir quinoa into egg mixture, and whisk in 1/2 cup of the cheese. Spread in the prepared baking dish and sprinkle with remaining 1/2 cup cheese. Bake for 30 minutes. Garnish with chopped tomato and green onion, if desired. Serve immediately.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 3-quart saucepan, heat oil over medium heat. Add onion and tomato; cover and cook 5 minutes or until onion is translucent and tender.
- Stir in quinoa and garlic. Cook 3 to 4 minutes or until grains begin to become translucent and brown slightly (they will still be undercooked).
- Stir in salt, pepper and paprika. Add water; cover and cook 15 to 20 minutes longer, stirring occasionally, until most of liquid is absorbed. Remove from heat; let stand 5 minutes.
- In medium bowl, beat eggs and milk with whisk until well blended. Stir into quinoa mixture. Add 1 1/2 cups cheese; stir to combine. Pour mixture into baking dish.
- Bake 30 to 35 minutes or until edges begin to brown. To serve, spoon into individual serving bowls; top with additional cheese, sour cream and green onions.

- Process cubed bread in a food processor to make bread crumbs. Set aside.
