3 tablespoons oil
1 lb thawed frozen okra
1 large onion, finely chopped
4 garlic cloves, crushed
1 large sweet pepper, thinly sliced
1 small hot pepper, finely chopped
2 large tomatoes, finely chopped
1 cup water
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon allspice

Steps:

  • Saute okra in the oil over med heat until it turns light brown. Turn several times. Remove okra with a slotted spoon and set aside on paper towels to drain excess oil.
  • Now to the oil add the garlic, onions and peppers. Cook over med low for 10 minutes.
  • Stir in okra and the remaining ingredients. Cook for 15 more minutes. Okra should be tender. Add water if needed.
  • Serve with hot cooked rice.

1/2 cup Salsa Verde, recipe follows
1/4 cup tomato sauce
1 teaspoon dehydrated minced garlic
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
Salt
1/2 pound green tomatillos
1/4 cup chopped yellow onions
1 serrano pepper
1/2 cup diced fresh cilantro
1/2 teaspoon salt

Steps:

  • Brown beef and potatoes in a large skillet. Add tomatoes, onions and bell peppers and cook until all are fully cooked, about 10 minutes. Add broth, Salsa Verde, tomato sauce, garlic, black pepper and cumin, then add salt to taste. Let simmer for 20 minutes.

2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
