Time 2h50m

Yield 30 turnovers

Number Of Ingredients 7

1/2 batch Quickest Puff Pastry
2 cookie sheets lined with parchment paper
1/4 cup shredded mozzarella
1/4 cup minced prosciutto
2 tablespoons chopped flat-leaf parsley
Freshly ground black pepper
1 egg well beaten with a pinch salt

Steps:

  • Roll the pastry out into a 12 by 18-inch rectangle. Slide onto a pan and refrigerate for about 1 hour, until the dough is firm and rested. Use a floured, round, 21/2-inch cutter to cut out the dough. Arrange the cut dough on the prepared pans, about 1- inch apart. In a bowl, stir together the cheese, ham, parsley and pepper. Brush the egg wash lightly on the dough and arrange the filling over half of each circle of dough. Fold the empty side of the dough over the filling and seal the edges well with your fingertips. Seal again by pressing around the rim with the back of the tines of a fork. Dip the fork in flour so it doesn't stick. Arrange the turnovers about 1-inch apart on the prepared. Refrigerate the turnovers loosely covered with plastic wrap until 30 minutes before serving. Set a rack in the upper third of the oven and preheat to 375 degrees. Egg-wash the tops of the turnovers and bake for about 20 minutes, until they're well colored and crisp. Cool the pastries on the pans and reheat to serve. Serving: Reheat the turnovers at 350 degrees at 350 degrees for about 10 minutes to serve them warm. Storage: Refrigerate or freeze leftovers and reheat before serving.

¼ cup GOYA® Tomato Sauce
6 GOYA® Spanish Olives Stuffed with Minced Pimientos, thinly sliced
2 tbsp. GOYA® Sofrito
1 packet Sazon GOYA® with Coriander and Annatto

CHEESY CURRY VEGGIE TURNOVERS

Time 1h30m

Yield 4 servings

Number Of Ingredients 13

2 tablespoons unsalted butter
3 medium cremini mushrooms, cut into 1/4-inch pieces
1/2 cup diced leeks, white and light green parts (about 1/2 medium leek)
Kosher salt
1 tablespoon Madras curry powder
1 cup 1-inch cauliflower florets
1 plum tomato, cored and diced
1/3 cup frozen peas, thawed
1 sheet puff pastry, thawed according to package instructions
All-purpose flour, for dusting
1 1/2 cups Sargento Fine Cut Shredded Sharp Cheddar (6 ounces)
1 large egg, beaten
Mango chutney, for serving, optional

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Melt the butter in a large saucepan over medium-high heat. When it begins to foam, add the mushrooms, leeks and 1/4 teaspoon salt, and cook, stirring, until well browned, 2 to 3 minutes. Add the curry powder, and cook for 30 seconds, stirring. Add the cauliflower, tomatoes, 1/2 cup water and 1/2 teaspoon salt, and stir, scraping up the spice paste from the bottom of the pan. Bring to a simmer, cover, reduce the heat to low and cook until the sauce has thickened and the cauliflower is tender, about 4 minutes. Remove the lid and, if necessary, continue to cook until the sauce is a thick, almost paste-like consistency and coats the vegetables, about 1 minute more. Transfer the filling to a medium bowl, and let cool completely. Stir in the peas.
  • Unfold the puff pastry onto a lightly floured surface, and roll it out into a 12-inch square.
  • Quarter the dough to make 4 equal squares. Put a quarter of the filling in the center of each square. Sprinkle 1/4 cup of the Cheddar on the top of each mound. Brush the edges of each square with the beaten egg, then fold 1 corner on top of the opposite corner, making a triangle. Transfer to the prepared baking sheet. Press along the edges with the back of a fork to create a pattern and seal the turnover. Brush each turnover with egg, and make 3 small slits on the top. Sprinkle each with 2 tablespoons of the remaining Cheddar.
  • Bake until the turnovers are golden brown and bubbly, 30 to 35 minutes. Serve hot with mango chutney if using.

2 tablespoons honey
1/4 teaspoon finely grated orange zest
1/4 teaspoon finely grated lemon zest
1/4 teaspoon ground cinnamon
1 14-ounce box refrigerated pie dough
All-purpose flour, for dusting
Confectioners' sugar, for topping

  • Transfer 1 tablespoon of the juice to a food processor, then drain the dried fruit and add to the processor. Add the honey, orange zest, lemon zest and cinnamon and pulse to make a paste.
  • Roll out 1 piece of dough into a 10-inch round on a lightly floured surface. Cut out circles using a 2 1/2-inch cookie cutter. Drop 1 teaspoon of the dried fruit paste in the center of each circle; fold the dough over to form a half-moon shape, pinching the edges together to seal. Crimp the edges with a fork, then poke a few small holes in the top of each. Repeat with the remaining dough and filling.

Tips:

  • Choose ripe quinces: Look for quinces that are a deep yellow color and have a sweet, fragrant smell.
  • Peel and core the quinces: Use a sharp knife to peel the quinces, then cut them in half and remove the core.
  • Cook the quinces until soft: You can cook the quinces in a pot of boiling water, in a slow cooker, or in an oven. The quinces should be cooked until they are soft and tender.
  • Sweeten the quinces: You can sweeten the quinces with sugar, honey, or maple syrup. Add the sweetener to the quinces while they are cooking, or stir it in after they have been cooked.
  • Add spices: To add flavor to the quinces, you can add spices such as cinnamon, nutmeg, or cloves. Add the spices to the quinces while they are cooking.
  • Use a variety of fillings: In addition to quinces, you can also use other fillings in your turnovers, such as apples, pears, or berries. Get creative and experiment with different flavor combinations.
  • Seal the turnovers well: To prevent the filling from leaking out, be sure to seal the turnovers well. You can do this by crimping the edges with a fork or by using a pastry brush to brush the edges with water before sealing them.
  • Bake the turnovers until golden brown: Bake the turnovers in a preheated oven until they are golden brown and the filling is bubbling. This usually takes about 20 minutes.

Conclusion:

Quince turnovers are a delicious and easy-to-make treat that are perfect for any occasion.
