DELICIOUSLY EASY GARLIC HERB FOCACCIA

Deliciously Easy Garlic Herb Focaccia image

Make focaccia in an hour. Or a little longer if your bread machine doesn't have a pizza cycle. Also great as a pizza dough! I personally use 2 cups unbleached bread flour and 1 cup whole wheat flour. As with most recipes I have created - they are a base on which to build.

CHEDDAR ONION FOCACCIA

Cheddar Onion Focaccia image

My nephew proclaims this the "King" of breads! I make this for him and my dinner guests often. It's easy and fairly fool-proof with a bread machine. A great accompaniment to soup and salad! The cook time does not include the bread machine time.

Time 25m

Yield 12 serving(s)

Number Of Ingredients 10

1 1/8 cups water
1 tablespoon olive oil
3 tablespoons chopped onions
1/2 teaspoon salt
1 tablespoon sugar
3 cups bread flour
1 1/2 teaspoons yeast
1/2 cup shredded cheddar cheese
1 tablespoon olive oil (or mister to spray bread)
coarse salt

Steps:

  • Place first 7 ingredients in bread machine according to machine directions.
  • Process on dough cycle.
  • Remove dough and form into a large semi-flat round.
  • Cover and let rise until double, approximately 45 minutes.
  • Uncover and press cheese into dough with fingertips.
  • Spritz or drizzle oil over the dough and sprinkle with salt.
  • Bake at 350 for 20-25 minutes or until bottom is slightly browned.
  • Slice into pie wedges and serve.

Tips:

  • Be sure to use active dry yeast. Instant yeast will not work in this recipe.
  • If you don't have a stand mixer, you can knead the dough by hand. Just be sure to knead it for at least 5 minutes, or until it is smooth and elastic.
  • The dough should be slightly sticky. If it's too sticky, add a little more flour. If it's too dry, add a little more water.
  • Let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
  • When rolling out the dough, don't roll it too thin. It should be about 1/2-inch thick.
  • Be sure to press the onions into the dough firmly. This will help them stay in place when you bake the bread.
  • Bake the bread in a preheated oven. This will help it rise evenly.
  • Let the bread cool for a few minutes before slicing and serving.
