PASTA WITH 15-MINUTE BURST CHERRY TOMATO SAUCE

Yield 4-6 servings

Number Of Ingredients 9

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and gives them a slightly smoky taste. If you have time, roast your tomatoes before making the sauce.
  • Use fresh basil: Fresh basil adds a bright, peppery flavor to the sauce. If you don't have fresh basil, you can use dried basil, but it won't be as flavorful.
  • Don't overcrowd the pan: When cooking the pasta, don't overcrowd the pan. This will prevent the pasta from cooking evenly.
  • Add the pasta to the sauce, not vice versa: When combining the pasta and sauce, add the pasta to the sauce, not vice versa. This will help prevent the pasta from sticking together.
  • Serve immediately: Pasta is best served immediately after it is cooked. If you need to make it ahead of time, store it in an airtight container in the refrigerator for up to 3 days.

Conclusion:

This quick tomato basil garlic pasta dinner is a delicious and easy meal that can be made in just 30 minutes. It's perfect for a weeknight dinner or a casual get-together. The roasted tomatoes and fresh basil give the sauce a rich and flavorful taste, and the garlic adds a savory depth of flavor. Serve this pasta with a side of crusty bread or a green salad for a complete meal.
