Time 20m

Number Of Ingredients 8

1 pound Brussels sprouts (trimmed and halved)
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
¼ teaspoon black pepper
1 tablespoon balsamic vinegar or lemon juice
1 to 2 tablespoons raw pine nuts (or chopped raw walnuts, almonds, or pecans (optional))
Chopped fresh herbs like parsley (cilantro or mint (optional))
A handful of Parmesan (feta, or goat cheese (optional))

Steps:

  • Heat a large cast iron or similar sturdy bottomed skillet over medium high for 4 minutes. Add the oil. As soon as the oil is hot and shining (but before it starts smoking), swirl to cost the pan, then add the halved Brussels sprouts. Shake the skillet a little and prod them so that as many as possible are cut-side down. Let sit completely undisturbed for 5 to 8 minutes, until they develop a dark, tasty, caramelized sear.
  • Add the salt and pepper. With a wooden spoon or spatula, stir the Brussels sprouts. Continue cooking, stirring every few minutes, until the Brussels sprouts are browned all over and just turning tender the inside, about 6 to 8 additional minutes.
  • Remove the pan from the heat. Stir in the vinegar, then the pine nuts or almonds. Let the residual heat of the skillet toast the nuts, stirring them very often so that they toast evenly on all sides and do not burn (if they aren't toasting, return the skillet to low heat). As soon as the nuts are toasted, transfer the sprouts to a serving plate and sprinkle with fresh herbs. Enjoy hot.

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 4

1 pound Brussels sprouts, trimmed and washed
2 teaspoons chopped fresh thyme
1 tablespoon balsamic vinegar
Freshly cracked black peppercorns

Steps:

  • Blanch the Brussels sprouts in a large pot of lightly salted boiling water until tender, about 10 to 12 minutes, and refresh in cold water. Cut in half and transfer to a bowl. Add the thyme, vinegar, and pepper, toss to coat, and serve.

Tips:

  • Select firm and vibrant Brussels sprouts: Look for Brussels sprouts that are compact, brightly colored, and free of blemishes. Avoid sprouts that are wilted, yellowed, or have brown spots.
  • Trim and clean the Brussels sprouts: Trim the stem end of each Brussels sprout and remove any yellow or damaged outer leaves. Rinse the sprouts thoroughly under cold water.
  • Use a steamer basket or colander: Place the Brussels sprouts in a steamer basket or colander that fits inside a pot. Make sure the steamer basket or colander is elevated above the water in the pot, so the sprouts steam rather than boil.
  • Bring the water to a boil: Pour water into the pot until it reaches just below the bottom of the steamer basket or colander. Bring the water to a boil over high heat.
  • Steam the Brussels sprouts: Once the water is boiling, reduce the heat to medium-low and place the steamer basket or colander containing the Brussels sprouts into the pot. Cover the pot and steam the sprouts for 5-8 minutes, or until they are tender but still slightly firm.
  • Season the Brussels sprouts: Once the Brussels sprouts are cooked, remove them from the steamer basket or colander and let them cool slightly. Season the sprouts with salt, pepper, and any other desired seasonings, such as butter, olive oil, garlic powder, or lemon juice.

Conclusion:

Steaming Brussels sprouts is a quick and easy way to cook this nutritious vegetable. Steamed Brussels sprouts retain their vibrant color, delicate flavor, and essential nutrients. Whether you enjoy them as a simple side dish or incorporate them into a more elaborate meal, steamed Brussels sprouts are a delicious and healthy addition to any diet.
