PICKLED BEETS

Steps:
- Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
- Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
- In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

Tips:
- Choose fresh, firm beets for pickling. Smaller beets are generally more tender and flavorful.
- To easily remove the beet skin, place the cooked beets in a bowl of ice water for a few minutes. The skin will then slip off easily.
- Use a mandoline or sharp knife to slice the beets thinly. This will help them pickle evenly.
- Use a variety of spices and herbs to flavor the pickling liquid. Common choices include mustard seeds, dill, garlic, and peppercorns.
- Bring the pickling liquid to a boil, then reduce heat and simmer for a few minutes. This will help infuse the liquid with flavor.
- Pour the hot pickling liquid over the beets and let them cool completely before refrigerating. This will help the beets absorb the flavors of the liquid.
- Store the pickled beets in the refrigerator for at least 2 weeks before eating. This will give them time to fully develop their flavor.
Conclusion:
Quick spicy pickled beets are a delicious and easy-to-make side dish that can be enjoyed year-round. They are perfect for adding a pop of color and flavor to salads, sandwiches, and wraps. They are also a great addition to cheese plates and charcuterie boards. With just a few simple ingredients and a little time, you can enjoy this tasty treat at home.
