SOUR CREAM CUCUMBERS

We have a tradition at our house to serve this creamy cucumber salad with the other Hungarian specialties my mom learned to make from the women at church. It's especially good during the summer when the cucumbers are freshly picked from the garden. -Pamela Eaton, Monclova, Ohio

Yield Serves 4 to 6

Number Of Ingredients 8

1/2 teaspoon salt
1 scant tablespoon sugar
2 tablespoons cider vinegar
1 cup sour cream
2 tablespoons chopped chives or a grating of onion
2 tablespoons chopped fresh dill, head and fronds
1 teaspoon celery seed
2 firm fresh cucumbers

Steps:

  • Dissolve the salt and sugar in the vinegar, add the sour cream and stir smooth. You may like more or less vinegar, salt or sugar, but don't make the dressing too sweet. Add the chives, dill and celery seed. Slice the unpared cucumbers paper-thin and combine with the dressing. Chill for 1 hour or more. Sour cream cucumbers improve in taste as they stand. The flavor of the cucumbers seeps into the dressing.

Tips:

  • For the best flavor, use fresh, ripe cucumbers. English cucumbers or Persian cucumbers are ideal for this recipe.
  • If you don't have sour cream, you can substitute plain Greek yogurt. Just be sure to drain the yogurt well before using it, so that the cucumbers don't get too watery.
  • Fresh dill is the best herb to use in this recipe, but you can also use dried dill if that's all you have. Just be sure to use half the amount of dried dill as you would fresh dill.
  • If you like a little bit of heat, you can add a pinch of cayenne pepper or red pepper flakes to the sour cream mixture.
  • Serve the cucumbers immediately, or chill them for later. They'll keep in the refrigerator for up to 3 days.

Conclusion:

Quick sour cream cucumbers are a refreshing and easy-to-make side dish that's perfect for summer. They're also a great way to use up any extra cucumbers you have on hand. With just a few simple ingredients, you can have a delicious and healthy dish that the whole family will enjoy.
