1/2 teaspoon ground mustard
1/4 cup shortening

2/3 cup milk

Steps:

  • Stir together flour and mustard in medium bowl. Cut in shortening, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in cheese. Add milk; stir just until dry ingredients are moistened.
  • Drop dough by rounded tablespoonfuls onto simmering stew. Cover; cook over medium-low heat 20 to 25 minutes or until dumplings are firm when pressed.

24 ounces dry curd cottage cheese (well drained ricotta or well drained regular cottage cheese OK)
2 eggs
1 1/2 cups flour (or more as needed)
1/2 teaspoon salt
1 tablespoon melted butter
buttered bread crumb, for serving

Steps:

  • Crumble cheese. (Can use processor for smoother texture.) Add beaten eggs, salt, butter and flour. Mix well. Chill for easier handling.
  • Pat and roll dough with hands on a floured board so it will be 1" in diameter, like a sausage. Cut into 1-1/2" pieces.
  • Bring 3 qts. water to a brisk boil and drop in ALL the dumplings. Cook for 15 minutes COVERED. Water must boil briskly all the while.
  • Serve with buttered bread crumbs.
  • Can make ahead and refrigerate.

1/2 dumpling recipe or 4 thick slices
250 g (1 cup) whipping cream
1 tbsp sugar (for cream)
2 tbsp unsalted butter
30 g (1/4 cup) breadcrumbs
1 tbsp sugar (for breadcrumbs)
30 g (1/4 cup) finely chopped almonds
30 g (1/4 cup) ground almonds
1/4 tsp cinnamon powder

Steps:

  • Add whipping cream and sugar to a saucepan. Stir and place over medium-high heat. Bring to a boil, then simmer for 6 - 8 minutes. The cream should thicken and cover the back of the spoon. Stir from time to time while cooking.
  • In a separate pan, melt the butter over medium heat. Add the breadcrumbs, sugar, finely chopped almonds, and ground almonds. Stir and pan-fry for 3 - 4 minutes. Remove from the heat and season with ground cinnamon.
  • Divide the whipping cream mixture between four plates. Place a warm štrukelj on top and sprinkle with toasted breadcrumbs. Serve as soon as possible.

Vintage recipe from St. Mary's Polish Church, McKeesport, PA. The name for this thick and delicious noodle stems from the fact you mix the cheese right into the dough. You don't even have to stuff the dumplings! It is an easy dish and very tasty. Meatless, it was a Lenten favorite years ago. We need to save these old-time recipes before they are gone forever! NOTE: You can substitute regular cottage cheese rinsed and drained VERY WELL. The farmer cheese called for is very similar in texture to cottage cheese; it is not the solid formed sliceable cheese you sometimes see... And the buttered breadcrumbs are key! It IS a Polish recipe, you know.

2 lbs dry-curd cottage cheese or 2 lbs farmer cheese
4 large eggs, beaten
1 1/2 teaspoons salt
2 cups all-purpose flour
10 quarts water
1 cup breadcrumbs, lightly toasted in
3 tablespoons butter, in a frying pan

Steps:

  • In a medium bowl mash the cheese with a fork. Stir in the eggs, 1/2 teaspoon of the salt, and the flour, all at once.
  • Turn the dough out onto a floured board and divide it into 4 pieces. Roll each piece out into a rectangle 12 inches long and 2 inches wide. Cut each piece on the diagonal into about 10 pieces.
  • Bring 10 quarts of water to a boil and add the remaining teaspoon salt. Reduce the water to a lightly rolling simmer and add 1/3 of the dumplings to the pot. Simmer, uncovered, until they float to the top.
  • Remove them with slotted spoon and drain. Continue until all dumplings are cooked.
  • Serve with a garnish of buttered toasted bread crumbs.
