Yield 6 to 8 servings

Number Of Ingredients 10

3-4 Tbsp butter
1 onion, diced
2 cloves garlic, diced
1 tsp thyme
15 oz can tomatoes, diced
2 bay leaves
1/4 tsp cayenne pepper
1/2 lb peeled, deveined shrimp (plus any liquid they came in, up to a cup)
1 tsp tomato paste
salt and pepper to taste

Steps:

  • Melt the butter in a large skillet. Sauté the onion until soft, then add garlic and thyme. After a minute add tomatoes, bay leaves, and pepper. Cover and let simmer for at least five minutes or shortly before serving. Add shrimp, cover, and simmer for five minutes. Mix in tomato paste, salt and pepper. Serve over rice or polenta (or grain of your choice).

Tips:

  • Prep Ahead: Save time by deveining and cleaning the shrimp, chopping the vegetables, and measuring out the ingredients before you start cooking.
  • Use a Large Skillet or Pot: This will help prevent the shrimp and vegetables from overcrowding and ensure they cook evenly.
  • Don't Overcrowd the Pan: If you're cooking a large batch, cook the shrimp and vegetables in batches to avoid overcrowding and ensure even cooking.
  • Cook the Shrimp Just Until Opaque: Overcooking will make the shrimp tough and rubbery. Cook them just until they turn from translucent to opaque, which takes only a few minutes.
  • Add the Vegetables Towards the End: This will prevent them from becoming overcooked and mushy.
  • Season to Taste: Taste the sauce before serving and adjust the seasonings as needed. Add more Cajun seasoning, salt, or pepper to your liking.
  • Serve Immediately: Shrimp Creole is best served hot over rice or pasta. You can also garnish it with fresh parsley or green onions for added flavor and color.
