1-3/4 cups butter, softened
2 cups sugar
8 large eggs, room temperature
1 teaspoon vanilla extract
3-3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 cans (8 ounces each) pineapple chunks, drained
1 jar (10 ounces) red maraschino cherries, drained and halved
1 jar (10 ounces) green maraschino cherries, drained and halved
2 cups chopped walnuts

Steps:

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. , Combine the flour, salt and baking powder; add to creamed mixture until well blended. Stir in pineapple, cherries and nuts. ¼ cup solid vegetable shortening (such as Crisco®)
2 eggs
1 teaspoon salt
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 (8 ounce) jar maraschino cherries, drained and juice reserved, divided
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.

2 teaspoons powdered sugar

Steps:

  • Heat oven to 325.
