Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you save time and avoid scrambling.
  • Cook the Pasta Al Dente: Cook the pasta according to the package instructions, but aim for al dente, or slightly firm to the bite. This will prevent the pasta from becoming mushy when you add it to the sauce.
  • Use a Large Skillet or Dutch Oven: You'll need a large skillet or Dutch oven to cook the chicken and sauce. This will give you plenty of room to stir everything together and prevent overcrowding.
  • Season the Chicken Generously: Don't be afraid to season the chicken generously with salt, pepper, and garlic powder. This will help add flavor to the chicken and the sauce.
  • Cook the Chicken Until Golden Brown: Cook the chicken over medium-high heat until it is golden brown on all sides. This will help seal in the juices and prevent the chicken from drying out.
  • Add the Vegetables and Cook Until Tender: Once the chicken is cooked, add the vegetables and cook until they are tender. This will help add flavor and color to the sauce.
  • Add the Crushed Tomatoes and Seasonings: Stir in the crushed tomatoes, Italian seasoning, basil, and red pepper flakes. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
  • Add the Pasta and Stir to Combine: Add the cooked pasta to the sauce and stir to combine. Cook for an additional 2-3 minutes, or until the pasta is heated through.
  • Serve Immediately: Serve the pasta immediately, garnished with fresh parsley and grated Parmesan cheese.

Conclusion:

This quick penne pasta with chicken and tomato sauce is a delicious and easy weeknight meal. It's made with simple ingredients that you probably already have on hand, and it can be on the table in under 30 minutes. The sauce is rich and flavorful, and the chicken is juicy and tender. Plus, the pasta is cooked al dente, so it has a slightly firm texture that holds up well to the sauce. This dish is sure to be a hit with the whole family!
