QUICK N' EASY SALMON PATTIES

I have used this recipe for many years and my family loves it, especially my husband. I think I got the recipe off of a crisco can when they still used paper wrapping on the cans.

Time 25m

Yield 8 patties,depending on size, 4-6 serving(s)

Number Of Ingredients 6

1 (16 ounce) can pink salmon
1 egg
1/3 cup minced onion
1/2 cup flour
1 1/2 teaspoons baking powder
1 1/2 cups Crisco (or preferred cooking oil)

Steps:

  • Drain salmon; set aside 2 TBSP of the juice.
  • In a medium mixing bowl, mix salmon, egg and onion until sticky.
  • Stir in flour.
  • Add baking powder to salmon juice and stir into salmon mixture.
  • (Don't mix baking powder and juice and add until you are ready to start cooking the patties, otherwise it will become flat).
  • Form into small patties and fry until golden brown (about 5 minutes) in hot crisco.
  • Serve with tartar sauce (optional).

Tips:

  • Choose the right salmon. Fresh or frozen salmon fillets or steaks can be used for this recipe. If using frozen salmon, thaw it completely before cooking.
  • Don't overcook the salmon. Salmon is a delicate fish that can easily become dry and overcooked. Cook the salmon patties over medium heat until they are just cooked through, about 2-3 minutes per side.
  • Use a food processor to make the salmon patties. This is the easiest way to get a smooth and consistent texture for the patties. If you don't have a food processor, you can also chop the salmon by hand, but it will take a little longer.
  • Add some moisture to the salmon patties. This will help to keep them moist and prevent them from becoming dry. You can add moisture to the patties by adding an egg, mayonnaise, or bread crumbs.
  • Season the salmon patties well. Salmon is a mild-flavored fish, so it's important to season the patties well. You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, or paprika.

Conclusion:

Salmon patties are a quick and easy way to enjoy this delicious and healthy fish. They are perfect for a weeknight meal or a casual lunch. Serve them with your favorite sides, such as rice, mashed potatoes, or roasted vegetables.
