Our Halibut Provencal works well for a casual weeknight or a weekend dinner party. This one-skillet dinner is not only healthy and delicious, but it's also simple to make. The fragrant tomato sauce with onions, herbs, and olives has a touch of anchovy paste to give the dish even more depth of flavor. You can serve this Mediterranean halibut over your favorite type of pasta or rice to drench in the rich tomato sauce.

4 Halibut fillets, 6 to 8 ounces each
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 tablespoon olive oil
1 red onion, thinly sliced
1/4 teaspoon red pepper flakes
2 garlic cloves, finely minced
1/2 cup dry white wine
1/4 cup clam juice
1 (28 ounce) can tomatoes, crushed, with the juices
2 tablespoons tomato paste
2 teaspoons anchovy paste (optional)
2 teaspoon Herbes de Provence
1/2 cup kalamata olives, pitted
1/3 cup dried bread crumbs
1 tablespoon olive oil
1 teaspoon Herbs de Provence
1/4 teaspoon salt
zest from 1 lemon

Steps:

  • Preheat the oven to 375°. Sprinkle both sides of the halibut with salt and pepper.
  • Heat olive oil in an oven-proof skillet over medium-high heat. Add the onion and cook for about 4 to 5 minutes until slightly browned. Add red pepper flakes and garlic. Cook, stirring constantly for 1 minute.
  • Add wine, clam juice, crushed tomatoes, tomato paste, anchovy paste, and Herbs de Provence. Simmer for 8 to 10 minutes to reduce the sauce a little then remove from heat and stir in the olives. (If you want the sauce thinner, only simmer it for a minute).
  • In a small dish, stir together the bread crumbs, olive oil, herbs, salt, and lemon zest.
  • Arrange the halibut fillets over the tomato mixture then sprinkle the bread crumb mixture over the top.
  • Bake for 15 to 30 minutes until the fish is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fish fillets. If the fillets are 1-inch thick, they will take approximately 22 to 25 minutes. If you have an instant-read thermometer, the halibut will be done when the internal temperature reads 130°F.

1 tablespoon grapeseed oil
1 shallot, minced
1 clove garlic, lightly crushed with the side of a knife blade and minced
1/2 teaspoon finely minced fresh rosemary leaves
1 teaspoon minced fresh thyme leaves
1 (16-ounce) can crushed tomatoes
Salt and freshly ground black pepper
6 (4-ounce) halibut fillets
1/2 cup heavy cream
1 cup grape tomatoes, quartered
1 tablespoon minced fresh flat-leaf parsley

Steps:

  • Heat grapeseed oil over medium heat in a saucepot. Saute the shallot and garlic until the shallots turn translucent, being careful not to burn the garlic. Stir in rosemary and thyme, add crushed tomatoes, season with salt and pepper, cover and let simmer for 15 minutes, then partially remove lid (leave it covered just enough to keep the spattering down) and reduce heat to medium-low, let thicken and reduce for another 15 minutes.
  • While the sauce is thickening, season the fish with salt and pepper. Arrange fish on a steaming rack and steam over a pan of boiling water until it flakes easily, about 6 to 7 minutes.
  • While the fish is steaming, remove the sauce from the heat and whisk in the cream. Strain the sauce into a bowl.
  • Spoon sauce into the center of serving plate, top with a fish fillet and fresh grape tomatoes. Sprinkle with parsley leaves.

1 tablespoon olive oil
1 garlic clove, minced
1/3 teaspoon dried crushed red pepper
2 shallots, sliced
1 fennel bulb, coarsely chopped (about 1 cup)
1 14 1/2-ounce can diced tomatoes with balsamic vinegar, basil, and olive oil
1 8-ounce bottle clam juice
10 Kalamata olives, pitted, quartered
2 tablespoons chopped fresh basil

Steps:

  • Preheat oven to 425°F. Sprinkle fish with salt and pepper. Set aside. Heat oil in heavy medium oven-proof skillet over medium-high heat. Add garlic and red pepper. Sauté until fragrant, about 2 minutes. Add shallots and fennel. Sauté until shallots are tender, about 5 minutes. Add tomatoes with juices and clam juice. Simmer until fennel is tender and liquid reduces slightly, about 5 minutes. Stir in olives.

1 cup white wine
6 (6 ounce) halibut steaks (or other white fish)
6 cups tomatoes, diced
2 cups onions, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon anchovy paste
1/8 teaspoon black pepper
2 garlic cloves, minced
1/4 cup breadcrumbs
1 tablespoon parmesan cheese
1 teaspoon olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Place wine and fish in an oiled 13"x9" baking dish.
  • Combine tomato through garlic, and spoon over fish.
  • Bake 35 minutes.
  • Preheat broiler.

2 teaspoons minced fresh marjoram
2 teaspoons minced fresh thyme

1/4 teaspoon finely chopped dried lavender blossoms*
1 1 1/2-inch-diameter zucchini, cut into eight 1/2-inch-thick rounds
1 unpeeled slender eggplant, trimmed, halved lengthwise, cut into eight 1- to 1 1/4-inch pieces
8 mini plum tomatoes or large cherry tomatoes
16 mini bell peppers in assorted colors (from one 5-ounce package) or 1 bell pepper cut into 1-inch squares
1 small red onion, cut into 4 wedges, each wedge halved crosswise, layers kept intact
5 tablespoons extra-virgin olive oil, divided
1 1/2 pounds halibut, cut into 1 1/2-inch cubes

Steps:

  • Mix first 7 ingredients in small bowl. Place zucchini, eggplant, tomatoes, peppers, and onion in large bowl. Add 1 tablespoon herb mixture and 1 tablespoon oil to vegetables. Sprinkle with salt and pepper; toss to coat. Thread 1 mini pepper, 1 zucchini round, 1 eggplant piece, 1 tomato, 1 onion piece, and 1 more mini pepper onto each of 8 skewers. DO AHEAD: Herb mixture and vegetables can be made 4 hours ahead. Cover separately and refrigerate.
  • Place fish in medium bowl; sprinkle 2 tablespoons herb mixture over. Add 3 tablespoons oil, 3 tablespoons lemon juice, and garlic; sprinkle with salt and pepper and toss to coat. Cover and chill at least 1 hour and up to 2 hours, tossing occasionally.
  • Simmer wine, remaining 1 tablespoon oil, and remaining 2 tablespoons lemon juice in small saucepan until reduced to 1/3 cup, about 3 minutes. Stir in remaining herb mixture. Season sauce to taste with salt and pepper. Set aside.
  • Spray grill rack with nonstick spray; prepare barbecue (medium-high heat). Divide fish cubes among remaining 4 skewers. Grill vegetable skewers until vegetables are slightly charred and tender, turning occasionally, 10 to 12 minutes. Grill fish skewers until fish is cooked through, turning occasionally, 8 to 10 minutes.
  • Place 1 fish skewer and 2 vegetable skewers on each plate. Drizzle sauce over.
