SOUTHERN FRIED GREEN TOMATOES RECIPE
Steps:
- In a large shallow bowl combine flour and spices. Whisk or stir to combine and set aside.
- .Use a mandoline slicer or a sharp knife and cutting board to slice each tomato into 1/4 inch pieces (no larger). Lay the sliced green tomatoes out on a large cookie sheet or plate and sprinkle with salt and pepper.
- Next dredge each slice in the flour mixture until coated shaking off the excess. Return to the cookie sheet and let sit for 5 minutes. After 5 minutes the tomatoes will begin to soak up some of the flour mixture. Once this happens dredge the tomatoes through the flour mixture a second time shaking off the excess.
- Add vegetable oil to a large deep skillet and heat over medium heat. You want the oil about an inch deep. Once the oil is shimmering, add your green tomatoes in and fry for 3-5 minutes per side until they are brown and crispy.
- Once golden brown remove from the oil and place on a paper towel lined plate and continue to fry in batches until all the tomatoes are fried. Serve warm with hot mayo sauce.

FRIED GREEN TOMATOES
"EACH TIME I fix these tomatoes, it takes me back to the Ohio farm where I grew up. I savor the taste of this delicately sauteed vegetable, with its crisp crust, moistened slightly with the pan gravy. Mom could do these to perfection! Maybe that's why this dish is my favorite part of this memorable meal."

QUICK FRIED GREEN TOMATOES
This is for those who've never had fried green tomatoes and/or may be a little intimidated at the thought of preparing them. This recipe is super easy, and super quick. I've had FGT that were a little grainy in texture or burned due to added sugar. These are much better with a delicate, crispy coating that literally melts in your mouth. If you feel the need for sugar sprinkle it on immediately after cooking.

Tips:
- Choose firm, unblemished green tomatoes for frying. This will ensure that they hold their shape and don't fall apart during cooking.
- Slice the tomatoes evenly so that they cook evenly. Aim for slices that are about 1/2-inch thick.
- Coat the tomato slices in a seasoned flour mixture before frying. This will help them to brown nicely and develop a crispy crust.
- Fry the tomato slices in a shallow layer of hot oil. This will help them to cook evenly and prevent them from becoming soggy.
- Don't overcrowd the pan when frying the tomato slices. This will cause them to steam instead of fry and will result in a soggy texture.
- Cook the tomato slices until they are golden brown and crispy on both sides. This should take about 2-3 minutes per side.
- Drain the tomato slices on paper towels before serving. This will help to remove any excess oil.
