Provided by Food Network Kitchen

Time 1h10m

Yield 6 servings

Number Of Ingredients 13

Cooking spray
4 skinless, boneless chicken breasts (6 to 8 ounces each), cut on an angle into thirds
1/2 cup sour cream
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Finely grated zest of 1 lemon
Kosher salt and freshly ground black pepper
5 cups cornflakes, finely crushed
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh thyme
6 tablespoons unsalted butter, at room temperature
12 frozen home-style waffles
Maple syrup, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Coat a rimmed baking sheet with cooking spray. Toss the chicken pieces with the sour cream, garlic powder, cayenne, half the lemon zest, 1/4 teaspoon salt and a few grinds of black pepper in a large bowl to coat. Set aside.
  • Put the cornflakes in a shallow dish and stir in the olive oil, 1 tablespoon thyme and a pinch each of salt and black pepper. Coat the chicken in the cornflake mixture, pressing to adhere. Place on the prepared pan and lightly coat with more cooking spray. Bake until lightly browned on top, about 15 minutes.
  • Meanwhile, mix the butter with the remaining lemon zest and 1 tablespoon thyme in a medium bowl. Season with salt and black pepper and set aside.
  • Remove the baking sheet from the oven and move the chicken to one side. Arrange the waffles in two rows on the other side of the pan, overlapping them. Bake, flipping and rotating the waffles halfway through, until a thermometer inserted into the thickest part of the chicken registers 165 degrees F and the waffles are toasted and hot, 10 to 15 minutes.
  • Spread the lemon-thyme butter evenly over the waffles. Serve the chicken and waffles with maple syrup.

3 cups low-fat buttermilk
1 stick unsalted butter, melted and cooled, plus more, room temperature, for serving
3 cups unbleached all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
Kosher salt and freshly ground pepper
1 cup safflower oil, plus more for brushing
4 thin chicken cutlets (about 1 pound total), patted dry
Pure maple syrup and hot sauce, such as Tabasco, for serving

Time 1h35m

Yield 8 servings

Number Of Ingredients 28

1 cup honey
1 cup maple syrup
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon apple cider vinegar
1/4 teaspoon cayenne
1/2 teaspoon kosher salt
2 cups all-purpose flour
1 cup shredded sharp Cheddar
2 tablespoons sugar
2 teaspoons baking powder
3 to 4 scallions, chopped, whites and greens separated
7 to 8 dashes hot sauce
2 teaspoons kosher salt, plus a pinch
2 large eggs
2 cups whole milk
8 tablespoons (1 stick) unsalted butter, melted
Nonstick cooking spray, for the waffle iron
Vegetable or canola oil, for frying
8 boneless, skin-on chicken thighs
1 cup buttermilk
2 cups all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground black pepper
1 1/2 teaspoons kosher salt, plus more for seasoning

Steps:

  • For the glaze: Combine the honey, maple syrup, chili powder, paprika, black pepper, vinegar, cayenne and salt in a small saucepot. Bring just to a simmer. Remove from the heat and let steep for 20 minutes, then strain into a clean container.
  • For the waffles: Preheat the oven to 250 degrees F and place a rack in the middle of the oven. Place a baking sheet fitted with a wire rack in the oven.
  • Whisk together the flour, Cheddar, sugar, baking powder, hot sauce, scallion whites and salt in a large bowl and set aside.
  • In another large bowl, whisk the eggs and a pinch of salt until just broken up, then add the milk and whisk. Pour in the melted butter and whisk until combined.
  • Add the wet ingredients to the dry ingredients and stir with a rubber spatula until the flour is just incorporated and no streaks remain (the batter may have a few lumps).
  • Preheat a Belgian waffle iron to medium heat according to the manufacturer's instructions. Spray with nonstick cooking spray, add some batter, close the lid, and cook until the steam starts to diminish (open the top and peek for doneness after a few minutes). Transfer the waffle to the wire rack in the oven to keep warm. Repeat with the remaining batter to make 8 waffles.
  • For the chicken: Pour 5-inches of oil in a heavy-bottomed pot. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Place the chicken thighs and buttermilk in a bowl. In a separate bowl, add the flour, garlic powder, onion powder, paprika, pepper and salt, and mix to combine. Dredge each thigh in the flour mix, then shake off any excess flour and carefully place in the oil. Fry until golden, 7 to 8 minutes. Remove the chicken to a paper bag or paper towels to drain excess grease and immediately season with salt.
  • Place each piece of fried chicken on top of a waffle and top each with some glaze and scallion greens to serve.

BUTTERMILK WAFFLES WITH BUTTERMILK FRIED CHICKEN TENDERS

Buttermilk Waffles with Buttermilk Fried Chicken Tenders image

Provided by Bobby Flay

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 18

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3 tablespoons sugar
1/2 teaspoon fine salt
3 large eggs
1 1/2 cups buttermilk
1 stick (8 tablespoons) unsalted butter, melted and cooled, plus more for the waffle iron
12 chicken tenders
2 cups buttermilk
Few dashes hot sauce, plus for serving
2 cups all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon chile de arbol powder or cayenne
Kosher salt and freshly ground black pepper
Canola oil, for frying
Honey, for drizzling

Steps:

  • For the waffles: Combine the flour, baking powder, baking soda, sugar and salt in a large bowl.
  • In a second bowl, whisk the eggs until smooth, then whisk in the buttermilk and butter until combined. Add the wet ingredients to the dry ingredients and mix just until the batter comes together; there will be lumps. Cover and let sit at room temperature for at least 30 minutes and up to 1 hour.
  • Preheat the oven to 250 degrees F. Set a baking rack over baking sheet and place on the center rack. Preheat a waffle maker according to manufacturer's instructions and brush with melted butter.
  • For each waffle, ladle about 1/3 cup of the batter onto the iron. Cover and cook until golden brown and crispy, 3 to 4 minutes; the waffles will be a little misshapen--not perfectly square, with rounded corners. As you go, transfer the cooked waffles to the baking rack in the oven and hold there while you fry the chicken.
  • For the fried chicken: While the waffle batter rests, place the chicken tenders in a resealable plastic bag. Add 1 cup of the buttermilk and the hot sauce, then seal the bag and marinate at room temperature for 1 hour.
  • In a medium bowl, combine the flour with the garlic powder, onion powder, chile de arbol, 1 teaspoon salt and 1/4 teaspoon black pepper. Transfer half of the flour mixture to a second bowl. In a third bowl, put the remaining 1 cup buttermilk.
  • Remove the chicken from the marinade and pat dry with paper towels. Sprinkle with salt and pepper.
  • Heat 2 inches of oil in a high-sided skillet, preferably cast-iron, over medium heat until it registers 360 degrees on a deep-fry thermometer. Working in batches to avoid crowding the pan, dredge the chicken in the first dish of seasoned flour, then dip in the buttermilk, letting excess drain off, and finally dredge in the second bowl of seasoned flour, tapping off excess. Fry until golden brown on both sides and just cooked through, about 5 minutes. Remove to a paper-towel-lined plate and season with salt.
  • To serve, put two waffles on each of four plates. Top them with three tenders and drizzle all with hot sauce, if desired, and honey.

FRIED CHICKEN AND WAFFLES

Categories     main-dish

Time 9h15m

Yield 4 servings

Number Of Ingredients 14

2 1/4 teaspoons kosher salt
1 teaspoon lemon zest (from 1 large lemon)
1/4 teaspoon sweet paprika
2 pounds bone-in chicken breasts (about 4 small breasts)
4 cups vegetable oil
1/3 cup instant flour, such as Wondra
1/4 cup finely ground cornmeal
1/2 teaspoon freshly ground black pepper
3 cups waffle mix, such as Krusteaz
1/2 cup vegetable oil
1/4 teaspoon ground cinnamon
Nonstick cooking spray
Maple syrup, to serve
Butter, to serve

Steps:

  • For the chicken: In a small bowl, mix together 1 3/4 teaspoons salt, zest and paprika. Sprinkle the breasts evenly with the mixture on all sides, rubbing the mixture into the chicken gently. Place in a bowl and cover with plastic wrap. Poke a few holes in the top so that air can circulate around the chicken. Refrigerate at least 8 hours or overnight.
  • Remove the chicken from the refrigerator and allow to sit at room temperature for 20 minutes.
  • Heat a 10-inch, straight-sided skillet over medium heat. Add the oil so it comes 1 inch up the side. Heat the oil until it reaches 325 degrees F on a deep-fry thermometer.
  • In a shallow bowl or pie plate, whisk together the flour, cornmeal, remaining salt and the black pepper. Dredge each breast in the dry mixture, making sure each piece is covered well with the mixture. Place each piece of chicken in the hot oil, letting it fall away from you, as to not splash yourself with hot oil. Fry the chicken for 10 minutes on the first side. Gently flip each piece of chicken and continue cooking on the other side until golden brown and cooked through, about 10 more minutes. Remove the chicken from the oil and allow it to drain for 5 minutes on a paper-towel-lined plate.
  • For the waffles: Preheat a standard waffle iron. With a whisk, mix together the waffle mix, 1 1/2 cups water, the vegetable oil and cinnamon until smooth. Lightly spray the waffle iron with nonstick cooking spray. Ladle approximately 3/4 cup of the batter into the iron and cook until the waffle is golden brown and crisp, 3 to 4 minutes. Remove the waffle to a plate and repeat with remaining batter.
  • Serve the chicken and waffles hot, with maple syrup and butter.

4 (5 ounce) boneless, skinless chicken thighs
2 cups buttermilk
2 tablespoons hot sauce
2 cups oil for frying, or as needed
1 ½ cups all-purpose flour
2 tablespoons paprika, divided
2 teaspoons garlic powder, divided
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided

2 tablespoons brown sugar
2 tablespoons maple syrup
1 cup coleslaw
1 ½ cups Belgian waffle mix (such as Krusteaz®)
⅔ cup water
1 large egg
3 tablespoons vegetable oil
cooking spray

Steps:

  • Begin preparing chicken: place chicken thighs in a medium bowl. Add buttermilk and hot sauce and stir to coat. Cover and refrigerate for at least 1 hour, or overnight.
  • Prepare waffles: combine waffle mix, water, egg, and oil in a medium bowl; whisk until well combined.
  • Preheat the oven to 250 degrees F (120 degrees C). Preheat a mini waffle maker according to manufacturer's instructions.
  • Spray waffle maker with cooking spray. Cook waffles one at a time until golden brown. Place cooked waffles on a baking sheet and place in the oven to keep warm.
  • Finish preparing chicken: heat 3 inches of oil to 350 degrees F (175 degrees C) in a deep cast iron skillet or Dutch oven.
  • While oil heats, combine flour, 2 teaspoons paprika, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper in a shallow dish.

Repeat the process once more, dipping chicken back in the buttermilk mixture and flour mixture, and shaking off any excess. Place chicken on a wire rack set inside a rimmed baking sheet. Repeat to coat remaining chicken.

  • Stir maple syrup into the remaining spice mixture.
  • Place 1 piece of chicken on a waffle and top with 1/4 cup coleslaw. Drizzle with 2 teaspoons of the spicy maple mixture and place a second waffle on top. Repeat with remaining ingredients and serve immediately.
