4 small red potatoes
1 small onion
1 Tbsp all purpose flour
1 can(s) evaporated milk, 5 ounce size
1 tsp salt
1/8 tsp onion powder
1/8 tsp garlic powder (you can use more onion and garlic powder, if you like)
1 c sharp cheddar cheese, divided

Steps:

  • 1. Preheat oven to 375 degrees. Spray a small casserole dish with cooking spray and set aside.
  • 2. Fill a large sauce pan about 1/2 full of water and bring to a boil. While water is heating, peel potatoes and onion and slice into about 1/4" slices. Add potatoes and onion to water and return to boil. When water is boiling, cover and reduce heat to medium. Cook 7 to 8 minutes or until potatoes are just tender.
  • 3. Drain off all but about1/4 cup of water. Mix flour and evaporated milk with a fork until smooth. Pour into potatoes. Add salt, onion powder and garlic powder and return to heat. Gently fold being careful not to break up potatoes until sauce begins to thicken. Remove from heat and gently fold in 1/2 of the cheese until melted.
  • 4. Pour potatoes into casserole dish and top with remaining cheese. Bake for about 20 minutes or until bubbly.
