SIMPLE BRUNSWICK STEW
This is no where near an "authentic" Brunswick stew but it is delicious. Some one gave me this recipe and we fell in love with it. I double the recipe and we take it for work lunches. Real Brunswick stew takes 3 days to make and cost an arm and leg. So this is a nice substitute when you can't get the real thing.

- 1. Cook onion in small amount of oil, in large 4qt or 8qt if double recipe, pot, till they are clear. Add rest of ingredients. Cook on low heat for 2 hours. The longer you cook it the better it is.
- 2. *Slow Cooker* Put all ingredients in your slow cooker and let it cook on low for 4-6 hours, or longer.
- 3. **Castleberry Meat** This ingredient is not available Nationwide. I have substituted one tub of BBQ meat such as Lloyd's that is sold in the grocery refrigerated meat section usually.
