1 pkg prewashed button mushrooms
1 1/2 c all purpose flour
1 c milk
1 large egg
salt and pepper to taste
cooking oil

Steps:

  • 1. Combine egg and milk in a small mixing bowl.
  • 2. Combine flour, salt, and pepper in another small mixing bowl.
  • 3. Dip mushrooms into egg/milk mixture. Roll in flour mixture to coat thoroughly. Dip in milk mixture again, and roll in flour mixture again.
  • 4. Fry in a deep fat fryer at 375 degrees until golden brown.
  • 5. Remove from oil and drain on paper towels.

8 -10 ounces whole white mushrooms
3/4 cup flour
2 eggs, slightly beaten
1 cup Italian seasoned breadcrumbs

Steps:

  • Wash the mushrooms and remove most of the stem.
  • Pat mushrooms dry with a paper towel.
  • Coat mushrooms with flour, lightly tap to remove excess flour.
  • Dip in eggs.
  • Coat with bread crumbs.
  • Set on a rack for a few minutes, so batter sets/dries.
  • Heat the oil in the deep fryer to 375 degrees. Pay close attention to grease while it heats. Cooking with oil at high heat levels can be dangerous!

1 c self rising flour
2 eggs, beaten

  • 1. Toss the flour in a ziploc bag, add salt & pepper to suit your taste. Beat 2 eggs in a bowl add 2 tablespoons of water.
  • 2. Put about 6 mushrooms in the egg mixture. Then drop them in the bag of flour mixture.
  • 3. Shake and coat the mushrooms in the flour mixture.
  • 4. I used a frying pan to deep fry my mushrooms. Heat the oil till hot (drop in a pinch of flour, if it sizzles, the heat is hot enough).Then lay the mushrooms in hot grease and fry to desired golden brown.

But we swapped in wild mushrooms that are "chicken fried" - coated in a shaggy buttermilk and seasoned flour batter, then deep fried to golden perfection, giving you a hearty vegetarian alternative to the beloved sandwich. We opted for maitake and oyster mushrooms because they hold the batter well and fry up crispy, but a variety of mushrooms would work well for this recipe.

3 tablespoons finely chopped pickles, such as gherkins or dill pickles
3 tablespoons whole-grain mustard
