1 cup uncooked rice
3 cloves of garlic, minced
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 tablespoon olive oil
1/2 teaspoon cumin
1/2 teaspoon oregano
2 teaspoons chili powder
1 can chili beans (15 oz) (pinto, kidney, black)
1 14 oz can diced tomatoes
1 cup grated cheese
1 pound buffalo optional
1/2 can tomatoe sauce optional

Steps:

  • Cook rice, according to package directions. I use 1/2 the amount called for. Saute garlic, onion, green pepper, and spices in olive oil until onion is transkucent, about five minutes. if using meat, I add it in now and cook until done. Add in remaining ingredients and heat. Serve over cooked rice. I add in tomatoe sauce if adding in meat. I also add rice in directly to chili and use tomatoe sauce to thin chili. Top with grated cheese and sour cream. Salt and Pepper to taste.
